Abstract
PURPOSE: Guts of raw Kinko (Cucumaria frondosa japonica) is drained and salted with a small amount of table salt, then stood under a condition separated from open air so that exuding water is removed, thus producing a products having taste and appearance like salt fish guts of sea urchin.
CONSTITUTION: Guts and water lungs taken out of raw Kinko are drained and 3W 4 wt% of table salt is sprinkled on them preferably in portions, then they are stood for 45W50 hr. At the stage where the inner organs turns to green, they are poured into vessels air-thightly sealable and stood preferably under vacuum at 20W25°C for 15W20 days. Then, when the guts turns yellow, the exduing water is removed.
