Abstract

PURPOSE: Continuous three-step press with heat is applied to oil-rich fishes to minimize the leaching of nutrients and taste components from fishes and prevent the deformation and destruction of the bodies, thus effecting satisfactory deffatting and dehydration.
CONSTITUTION: Oil-rich fishes such as sardines or mackerel are heated at temperatures for a time enough to coagulate the surface layers, e.g., at 90W110°C for 30W 120min under pressing at about 5W8kg/cm2, preferably 6W7kg/cm2, whereby oil and water are removed from the surface layers of fish bodies. Then, under pressure oil lower than 1.5kg/cm2, preferably lower than 1kg/cm2, the fishes are heated at 90W110°C until the whole protein is coagulated, whereby the oil and water are removed from the all parts of fish bodies. Finally, the fish bodies are heated at 90W110°C for 20W40min under pressure of 5W8kg/cm2, preferably 6W7kg/cm2 to effect defatting and dehydration supplementarity as well as adjust the shape of fish bodies.
