Abstract

PURPOSE: To prepare an almond drink having flavor of roast almond, by roasting almond stones at a specific temperature, grinding the roast almond to obtain a pasty product, adjusting the pH of the paste to a specific value, and heating and sterilizing the paste.
CONSTITUTION: Almond stones separated from almond fruits are roasted at 120W 150°C for 1W3min, and ground with a mixer, chopper, etc. to obtain a pasty product, which is compounded with water or sugared water, and if necessary, with various food additives or sodium metaphosphate, etc., and then added with sugars to attain the sweetness degree of about 8W10. The composition is added with sodium bicarbonate to control the pH between 7.2 and 8.0, and sterilized by heating at, e.g. 120°C, for about 30W40min.
