Abstract
PURPOSE: To obtain a food like boiled fish paste without using ground fish, by adding KONJAK (devil's tongue) powder to milk, stirring and heating them, grinding them when the temperature is lowered to a given temperature, blending them with a solution of calcium hydroxide, starch, seasoning, etc. with stirring, steaming the blend.
CONSTITUTION: 1kg milk is blended with 30W40g KONJAK powder with stirring, boiled at 70°C for ≥5min, taken out to a container and cooled to ≤35°C. The blend is ground, after about 5min, blended with a solution of 2W4g calcium hydroxide in 50W100cc hot water, and, further with 100W150g starch and a proper amount of seasoning. They are fully kneaded for ≥5min. The blend is then transferred to a proper container, shaped, and steamed in a basket steamer for 15W20min to give a final product. 1kg milk gives 1kg final product, this preparation is an economical process, and the food like boiled fish paste can be obtained without using ground fish whose source is apt to be in short supply.
