Abstract
PURPOSE: To obtain a membrane-like dough covering for cooking having unique color, flavor, and texture, at a low cost, by incorporating main material wheat flour with one or more types of flavoring materials, e.g. laver, ginger, ume, beefsteak, plant, egg, miso, sesame, milk, and spices.
CONSTITUTION: Wheat flour as a main material is incorporated with about 1W 25wt%, preferably 3W10wt%, based on the total weight of dry raw materials of one or more flavoring materials selected from laver, ginger, ume, beefsteak plant, Japanese ginger, Guinea pepper, egg, miso, sesame, citron, Japanese pepper, milk, soybean milk, and spices. Common salt is then added, and the mixture is kneaded with water. The dough is rolled into a thin sheet of given shape, and cut to give the objective membrane-like covering for cooking of desired size usable for shao-mai, fried dumpling stuffed with minced pork, and wont on.
