Claims (14)
- 少なくとも1つの食肉加工機(2)と、
少なくとも1つの洗浄装置(3)と
を備える食品加工システム(1)であって、
前記食肉加工機(2)は、使用中に食品と接触する表面(5)を有する少なくとも1つの部品(4)を備え、
前記洗浄装置(3)は、前記少なくとも1つの表面(5)を少なくとも洗浄するように構成され、
前記洗浄装置(3)は、洗浄流体を供給する手段を備える、食品加工システム(1)において、
前記洗浄流体がプラズマ活性物質であり、前記洗浄装置(3)が、プラズマ活性水を調製する装置を備えるか、又はこの装置に連結されており、前記プラズマ活性水が前記食肉加工機(2)の多孔性の前記表面(5)に供給される、食品加工システム(1)。 - 前記食肉加工機(2)の表面(5)及びその下部構造が、少なくとも部分的に多孔性となっており、
特に、前記表面(5)が、少なくとも部分的に多孔性表面となっている、請求項1に記載のシステム(1)。 - 前記食肉加工機(2)が、冷凍機、成型機、塗工機、揚げ機、調理機、ミキサー、タンブラー、肉挽機、ボウルチョッパ、食品注入器、又は塩水調製及び/若しくは注入装置となっている、請求項1又は2に記載のシステム(1)。
- 前記食肉加工機(2)は、前記食肉加工機(2)が定置洗浄法及び/又は定置消毒法用に構成されるように、前記洗浄装置(3)を備えているか、又は前記洗浄装置(3)に連結されている、請求項1~3のいずれか一項に記載のシステム(1)。
- 前記部品(4)が、空気及び/又は水のような流体を移送する手段(8)、特に、少なくとも1つの開口又は通路を備え、
前記部品(4)が、前記プラズマ活性水を流体移送手段(8)に供給する手段(9)に接続されているか、又は離脱可能に接続可能に構成されている、請求項1~4のいずれか一項に記載のシステム(1)。 - 前記食肉加工機(2)及び/又は洗浄装置(3)が、加圧空気を供給する空気源を備えている、請求項1~5のいずれか一項に記載のシステム(1)。
- 空気又は水のような流体を供給する少なくとも1つの流体移送手段(8)、例えば、通路又はチューブを備える食肉加工機(2)であって、
前記食肉加工機(2)が、少なくとも所定の期間中にプラズマ活性水が前記流体移送手段(8,9)を通して供給されるように構成され、
前記食肉加工機(2)が、プラズマ活性水を供給する供給源に離脱可能に接続可能になっているか、又は接続されている、食肉加工機(2)。 - 請求項1~6のいずれか一項に記載の食品加工システム(1)の食肉加工機(2)の食品接触表面(5)を洗浄、消毒、滅菌、及び/又は殺菌する方法であって、
前記食肉加工機(2)の使用後に、好ましくは、毎使用後に洗浄ステップが行われ、
前記洗浄ステップ中に、前記表面(5)がプラズマ活性水によって処理される、方法。 - 前記洗浄ステップが、前記表面(5)を前記プラズマ活性水によってすすぎ洗いし、入浴洗いし、シャワー洗浄し、浸漬し、及び/又は噴霧することを含む、請求項8に記載の方法。
- 前記洗浄ステップが、前記食肉加工機(2)内にて行われ、
前記方法が、定置洗浄法及び/又は定置消毒法である、請求項8又は9に記載の方法。 - 前記洗浄ステップの前に、洗浄されるべき前記表面(5)を備える前記部品(4)が、前記食肉加工機(2)から取り外され、洗浄のために前記洗浄装置(3)に移送される、請求項8又は9の方法。
- 前記洗浄ステップ中に、前記部品(4)及び/又は前記表面(5)が、移動され、好ましくは、回転される、請求項8~11のいずれか一項に記載の方法。
- 前記洗浄ステップの後に、加圧空気の流れを前記表面(5)に導くことによって、乾燥ステップが行われる、請求項8~12のいずれか一項に記載の方法。
- 前記洗浄ステップ及び/又は前記乾燥ステップ中に、予混合された流れが、前記表面(5)に送られるようになっており、
前記予混合された流れは、プラズマ活性化水を含む、請求項13に記載の方法。
