Claims (9)
- バルク食品製品である、カカオ、ナッツ、例えばアーモンド、ヘーゼルナッツ、ペカンナッツ、またはくるみのようなナッツ、コーヒー、種子、穀類、麦芽、ピーナッツ、ブラン、グレーン、またはひまわり種のような脂肪種子の、焙煎を実施する方法であって、
前記食品製品を焙煎のための所定の温度にさらし、
前記焙煎中に前記食品製品が置かれている雰囲気中の水の分圧を、前記雰囲気への蒸気の計画的な供給により制御して、前記焙煎の持続中、前記食品製品において実質的に均一な初期の水分分布を維持し、
前記食品製品を、前記焙煎後に乾燥させ、前記雰囲気中の前記水の分圧を、乾燥中は、前記焙煎中の前記雰囲気中の前記水の分圧よりも低くする、
バルク食品製品の焙煎を実施する方法。 - 前記焙煎中、前記食品製品からの計画的な水分流出を調節できるように、前記水の分圧を調節する、請求項1記載の方法。
- 前記水の分圧を、前記雰囲気中の相対空気湿度、および/または前記食品製品の水分含量および/または密度の測定に基づいて制御し、前記水分含量または密度の測定を、マイクロ波放射または容量センサを使用して実施する、請求項1または2記載の方法。
- 予め設定された温度を達成するために、かつ/または予め設定された温度を維持するために、前記雰囲気に高温空気を供給し、前記水の分圧を、供給空気の水分、および/または高温空気流の排出空気に基づき制御する、請求項1から3までのいずれか1項記載の方法。
- 前記焙煎中、前記食品製品内に、90℃〜230℃の温度の実質的に均一な分布が存在している、請求項1から4までのいずれか1項記載の方法。
- 前記焙煎中に維持される温度は、露点温度または前記食品製品のガラス転移温度である、請求項5記載の方法。
- 前記焙煎の持続を、前記食品製品の密度の測定に基づき制御する、請求項1から6までのいずれか1項記載の方法。
- 前記食品製品を、前記焙煎後に乾燥させ、前記雰囲気中の前記水の分圧を、乾燥中に、前記食品製品内の密度変化に基づき制御する、請求項1から7までのいずれか1項記載の方法。
- 請求項1から8までのいずれか1項記載の方法を実施するための装置であって、前記装置は、焙煎チャンバまたは焙煎ドラムと、前記焙煎チャンバまたは焙煎ドラム内に高温空気を供給するための供給空気ダクトと、排出空気ダクトと、前記供給空気ダクト内に蒸気を供給するための手段とを有しており、
前記装置はさらに、以下の測定手段、すなわち、
マイクロ波放射を利用して、前記食品製品の密度を求めるための手段、
マイクロ波放射を利用して、前記食品製品の水分含量を求めるための手段、
前記焙煎チャンバまたは焙煎ドラム内の相対空気湿度を求めるための手段、
供給空気湿度を求めるための手段、および
排出空気湿度を求めるための手段、
のうちの少なくとも1つを有している、請求項1から8までのいずれか1項記載の方法を実施するための装置。
