・ピーク保持時間 MSの解析によって成分および濃度の同定を行った。
グレープフルーツ果汁含有アルコール飲料を下記のように調製した。具体的には、飲料がBRIX6.0、pH3.3となるように、表1に示す組成に従って、ニュートラルスピリッツ、グレープフルーツ果汁、液糖、香料を混合後、炭酸ガスを加え、缶に充填しその後熱水にて殺菌して、容器詰めのグレープフルーツチューハイ(実施例及び比較例)を調製した。いずれのチューハイも、ガス圧(20℃)は1.8kgf/cm2であった。
Claims (4)
- グレープフルーツ果汁を果汁率換算で10〜40w/w%含有するアルコール飲料であって、ナリンギンの含有量が43〜120ppmであり、かつ、ナリンギンとリモネンの含有重量比(ナリンギン/リモネン)が4/1〜1/1であり、リモニンの含有量が5ppm以下である、容器詰め果汁含有アルコール飲料。
- リン脂質の含有量が10ppm以上である、請求項1記載の容器詰め果汁含有アルコール飲料。
- 高甘味度甘味料を含有しない、請求項1又は2記載の容器詰め果汁含有アルコール飲料。
- 発泡性を有してなる、請求項1〜3いずれか記載の容器詰め果汁含有アルコール飲料。
