Description
本態様による飲料製品の特定の実施形態では、レバウジオシドMは、コーラ飲料中に甘味を付与できる量で存在する唯一の甘味料成分であり、他の実施形態では、1つ又は複数の強力でない甘味料がコーラ飲料中に含まれるが、レバウジオシドMが甘味を付与できる量、即ち(甘味増強剤等のそれ自体が甘味料ではない成分の任意の擬甘味付与効果を無視して)コーラ飲料に知覚できる甘味を添加し得る量で存在する唯一の甘味料である。他の実施形態では、炭酸コーラ飲料製品は更に、追加の甘味料、例えば、他のステビオールグリコシド、又はより詳細には他のレバウジオシド類、例えばレバウジオシドA、レバウジオシドD、スクロース、HDCS、モナチン、タウマチン、モネリン、ブラゼイン、L‐アラニン、グリシン、羅漢果、ヘルナンズルチン、フィロズルチン、トリロバチン、及びこれらのうちの任意の2つ以上の組合せからなる群から選択される、少なくとも1つの甘味料を含む。任意に、コーラ飲料製品中のあらゆる甘味付与成分は、強力な甘味料(あるいは高甘味度甘味料と呼ばれる)、例えば天然高甘味度甘味料である。
レバウジオシドM及び少なくとも1つの他の可食成分を含む甘味料組成物。更なる態様では、上記少なくとも1つの可食成分は風味材料、流動化剤、着色剤、嵩高剤である。任意の態様において、甘味料組成物は1食分の量で梱包してよい。別の態様では、甘味料組成物は、甘味を付与できる量のレバウジオシドMと、嵩高剤、エリスリトール、D‐プシコース、D‐タガトース及びこれらのうちの2つ以上の組合せから選択される少なくとも1つの他の可食成分とを含む。
2セットの酸性化した水試料を用いた官能研究を実施した。これらについて以下に説明する。セット1:HFCS‐55 11.7%;アスパルテーム 400ppm、及びレバウジオシドM 400ppm;並びにセット2:アスパルテーム 400ppm、レバウジオシドM 400ppm、及びレバウジオシドD 400ppm。これらの官能研究を、14人の専門的な訓練を受けたパネリストによって実施し、各セットに関して2回の評価を行った。表2及び表3は、この官能研究によって得られた甘味スコアを示す。採点のスケールは0〜15であり、15が最も甘い。数字による甘味の値と共に表2及び表3に示す文字は、味覚に統計的に有意な差が見られたかどうかを表すものであることは、当業者には理解されるだろう。従って表1では、セット1に関して3つの甘味料の間に統計的に有意な差が見られたことを確認できる。表2では、セット2に関して、レバウジオシドMと他の2つの甘味料との間に統計的に有意な差が見られたことを確認できる。より一般には、セット1及びセット2の両方に関して、レバウジオシドMは際立って高い甘味値を有していたことを確認できる。従って表2及び表3の結果は、レバウジオシドMがアスパルテーム及びレバウジオシドDよりも有意に甘いことをはっきりと示す。
3つの異なる配合それぞれに関して、完成品のレディ・トゥ・ドリンクコーラ飲料の試料を調製した。これら配合は、シロップ変形例1が甘味料としてレバウジオシドAを使用し、シロップ変形例2が甘味料としてレバウジオシドDを使用し、シロップ変形例3が本開示の発明の一態様に従って甘味料としてレバウジオシドMを使用した点を除いて同一であった。配合変形例1及び配合変形例3のレディ・トゥ・ドリンクコーラ飲料試料に関して、1+5杯の炭酸水を使用して対応するレディ・トゥ・ドリンクコーラ飲料試料を作製するために好適な、2.0リットルのシロップを調製した。(甘味料としてレバウジオシドAを含む)変形例1及び(甘味料としてレバウジオシドMを含む)変形例3を調製するために、以下の表4に列挙した成分を、およそ1.0〜1.5リットルの精製水に撹拌しながら添加した。続いてシロップの体積が2リットルになるまで精製水を添加した。そしてこのシロップの50mL部分をそれぞれ、炭酸水の250mL部分に添加し、即ち「1+5杯」とし、2つのシロップ変形例それぞれに対応する完成品のレディ・トゥ・ドリンクコーラ飲料の試料を得た。レバウジオシドDは可溶性が低いため、レバウジオシドDによって甘味を付与されたシロップコーラ飲料試料は異なる様式で調製した。具体的には、まず、甘味を付与されていないコーラ飲料試料を試料瓶中で作製した。続いて各瓶に、400ppmのRebDを注意深く追加した。瓶を密閉して振盪し、RebDを確実に溶解させた。
それぞれ400ppmのレバウジオシドA、400ppmのレバウジオシドD及び400ppmのレバウジオシドMを用いて甘味を付与された、レディ・トゥ・ドリンクコーラ飲料の3つの異なる変形例の試料を、上述のようにして調製して保管した。数日保管した後、これらの試料を官能試験に供し、ダイエットコーラ飲料の味覚試験を含むコーラ飲料の味覚試験に精通している5人によって評価した。変形例3の試料(400ppmのレバウジオシドMを用いて甘味を付与されたレディ・トゥ・ドリンクコーラ飲料試料)は、これらの試料のうちで最も良好な味覚を有すると判定された。変形例1の試料、即ち400ppmのレバウジオシドAを用いて甘味を付与されたレディ・トゥ・ドリンクコーラ飲料試料は、有意に検出可能な苦い後味を有することが分かり、最も好ましくないと判定された。
本開示の発明の一態様によるダイエットコーラ飲料の、レバウジオシドMで甘味を付与された配合の味覚品質は、エリスリトール(0〜3.5質量%)、D‐タガトース(0〜1質量%)、D‐プシコース(FDA GRAS#400;0〜2.1質量%)又はこれらのうちの任意の組合せ等の低カロリーの強力でない甘味料を添加することによって改善された。完成品のレディ・トゥ・ドリンクコーラ飲料の試料を、6つの異なるこのような配合それぞれに関して調製した。これら配合は、500ppmのレバウジオシドMによって甘味を付与されたレディ・トゥ・ドリンクダイエットコーラ飲料であり、表5に示す低カロリーの低強度甘味料成分である嵩高剤以外は同一であった。表5に示すように、これら6つの変形例はそれぞれエリスリトール、D‐タガトース及び/又はD‐プシコースを含有していた。これら6つの変形例それぞれの試料を、コーラ飲料及びコーラ飲料の味覚試験に精通している5人によって評価した。具体的には、6つの配合の変形例の試料を試験し、互いに、及び上記低カロリーの低強度甘味料成分である嵩高剤を有しないことを除いて同一である対照試料と、比較した。
ダイエットコーラ飲料の味覚試験を含むコーラ飲料の味覚試験に精通している5人による、6つの変形例の試料の味覚試験の結果。味覚試験は、嵩高剤の添加によって、対照試料に対して試料の食感が増進されたことを示した。更に、予期せぬことに、D‐プシコースを有する変形例は初期の甘味も改善されたことが分かった。初期の甘味は一般に、ステビオールグリコシドによって甘味を付与された飲料には欠けており、変形例3、変形例5及び変形例6におけるこの追加の有利な効果は、予期せぬ現象であった。変形例5及び変形例6は、全ての変形例の中で最良であると判定された。変形例6は、アスパルテーム又は他の人工甘味料を用いて甘味を付与された、現在市販されているダイエットコーラの味覚に近い味覚を有するものの、有意に良好な食感を有するものとして知覚された。
本開示の発明の一態様による完成品のレディ・トゥ・ドリンクダイエットコーラ飲料の試料を、2つの配合変形例それぞれから調製した。これら配合は、レバウジオシドMによって甘味を付与されたレディ・トゥ・ドリンクダイエットコーラ飲料であった。以下の表6に示すように、変形例1は低強度甘味料成分を有さず、変形例2は強力でない甘味料成分を有していた。両方の変形例の試料を、コーラ飲料及びコーラ飲料の味覚試験に精通している2人によって評価した。
ダイエットコーラ飲料の味覚試験を含むコーラ飲料の味覚試験に精通している2人は、変形例1及び変形例2の試料を試飲した。これらはそれぞれ良好な甘味味覚プロファイル及び食感を有するものの、変形例2が変形例1よりも有意に良好な甘味品質及び食感を有することが分かった。
本開示の発明の一態様によるレバウジオシドMによって甘味を付与された完成品のレディ・トゥ・ドリンクダイエットコーラ飲料の試料を、2つの配合変形例それぞれに関して調製した。これら2つの変形例はそれぞれ、2.0gの可溶性RebD(即ちレバウジオシドDとレバウジオシドAとの重量比が7:3)と共に1.5gのレバウジオシドMを用いて甘味を付与された。以下の表5に示すように、変形例1は強力でない甘味料成分を有さず、変形例2は強力でない甘味料成分を有していた。両方の変形例の試料を、ダイエットコーラ飲料の味覚試験を含むコーラ飲料の味覚試験に精通している2人によって評価した。

本開示の発明の一態様による、レバウジオシドMによって甘味を付与されたレディ・トゥ・ドリンク低カロリーフローズンタイプ飲料を、以下の表9に示す濃縮シロップから調製する。以下の表9に示すように、配合は強力でない甘味料成分を含む。表9の濃縮シロップを1+5杯の水で希釈して、飲料混合物を製造する。この飲料混合物をフローズンタイプ飲料ユニットのホッパに注入してフローズンタイプ飲料を生成し、このフローズンタイプ飲料は吐出され、風味付きシロップを添加することによって更に風味を付与される。
本開示の発明の一態様によるレバウジオシドMを含む、食品調製にあたってバルク状態で、又は卓上甘味料として使用するのに好適な甘味料組成物を、以下の表10に示す配合を用いて調製する。表10の甘味料組成物は、調理中の成分としての、又は即時消費用の水若しくは他の液体に若しくは他の食品に添加するための使用に好適である。甘味料組成物はバルク状態で、又は提案された1食分サイズをそれぞれ含有するパックに梱包できる。必要に応じて、表10に示す配合に微量の風味付与剤(例えば0.01g以下)又はより高い濃度の風味付与剤を添加できる。
ダイエットタイプフローズンタイプ炭酸飲料を、本開示の発明の一態様に従って調製する。フローズンタイプ炭酸飲料のための飲料シロップは、甘味が付与されていないレモン‐ライムCSDベース(例えばダイエットマウンテンデュー(登録商標)ベース又は他のレモン‐ライムCSDベース)1.0ガロンに、エリスリトール(完成品の飲料の3.5質量%)及びD‐プシコース(完成品のドリンクの2.1質量%)を添加することによって調製される。完全な溶解が起こるまでこの溶液を撹拌する。レバウジオシドM(完成品の飲料の500ppm)を添加し、完全な溶解が達成されるまでこの溶液を再び撹拌する。このようにして調製されたシロップを、完成品のフローズンタイプ炭酸飲料のレディ・トゥ・ドリンク状態の1食分を吐出する際にシロップに炭酸水を添加するよう構成されたフローズンタイプ炭酸飲料用機械(「FCBディスペンサ」)に投入する。得られた完成品のフローズンタイプ炭酸飲料のレディ・トゥ・ドリンク状態の1食分は、良好な二酸化炭素オーバラン、なめらかでクリーミーな口当たり、及び優れた味覚を有している。続いてシロップを、FCBディスペンサに連続的に通過させて、完成品のフローズンタイプ炭酸飲料の、高品質なレディ・トゥ・ドリンク状態の供給を安定して達成できる。
