(2)前記燻製工程において、前記燻煙が、イタヤカエデ、コナラ、タムシバ、ヤマザクラから選択された少なくとも1種の木材チップを加熱することにより得られている(1)に記載の保存食品の製造方法。
Claims (2)
- 保存性に優れた保存食品の製造方法であって、
食材を燻煙で燻すことにより燻製にする燻製工程と、
前記燻製工程で燻製にされた食材を含んで調理または加工することにより保存食品を得る調理/加工工程とを含み、
前記食材が大豆または小豆であり、前記燻製工程の前に前記大豆または小豆を予め加水加熱する加水加熱工程が実施され、
前記加水加熱工程と前記燻製工程の間において、加水加熱された前記豆類を乾燥させる乾燥工程が実施され、
前記燻製工程が、30〜60℃の燻煙雰囲気内に30〜90分間前記食材を晒すことにより実施されている一方、前記乾燥工程が、40〜70℃の温風雰囲気内に30〜90分間前記食材を晒すことにより実施されていることを特徴とする、保存食品の製造方法。 - 前記燻製工程において、前記燻煙が、イタヤカエデ、コナラ、タムシバ、ヤマザクラから選択された少なくとも1種の木材チップを加熱することにより得られている請求項1に記載の保存食品の製造方法。
