Abstract
Description
(1)熱交換器のフィンにフロストが生じない第1の吹出温度の冷風で食品を冷却して当該食品の主に除湿処理を行う除湿ステップと、
除湿ステップを経た食品を、前記第1の吹出温度よりも低く前記フィンにフロストが生じ得る第2の吹出温度の冷風で冷却して当該食品の主に冷却処理を行う冷却ステップと
を含む。
このとき、熱交換器における冷媒の蒸発温度は約5℃であり、風量が256m3/minで、比容積が0.827m3/kgであるとすると、除湿量は(256×60)÷0.827×(0.0085−0.0070)≒27.9kg/hとなる。
このとき、熱交換器における冷媒の蒸発温度は約−10℃であり、風量が256m3/minで、比容積が0.777m3/kgであるとすると、除湿量は(256×60)÷0.777×(0.0030−0.0024)≒11.9kg/hとなる。
本発明は前述した実施形態に限定されるものではなく、特許請求の範囲内において種々の変更が可能である。
例えば、前述した実施形態では、枝肉冷蔵庫が3つのゾーンに分割されているが、主に除湿処理を行うゾーンと、主に冷却処理を行うゾーンとがある限り、分割の数は2つであってもよいし、4つ以上であってもよい。

Claims (3)
- 熱交換器のフィンにフロストが生じない第1の吹出温度の冷風で食品を冷却して当該食品の主に除湿処理を行う除湿ステップと、
除湿ステップを経た食品を、前記第1の吹出温度よりも低く前記フィンにフロストが生じ得る第2の吹出温度の冷風で冷却して当該食品の主に冷却処理を行う冷却ステップと
を含む、食品冷却方法。 - 前記第1の吹出温度が10〜20℃であり、前記第2の吹出温度が−5〜0℃である、請求項1に記載の食品冷却方法。
- 前記フィンのピッチが2〜5mmである、請求項1又は請求項2に記載の食品冷却方法。
