Abstract
PURPOSE: To obtain meat in a chilled state short time after slaughter, by cooling quickly the surface of a carcass until it is partially frozen, cooling it until the temperature of the core becomes 20°C, dividing it to portioned meat, and bringing it into contact with a cooling belt at a specific temperature.
