Abstract
Description
トリアシルグリセロールとしてニッコールトリファットC−24(商品名、融点:20〜26℃、日光ケミカル社製)60gと、トリアシルグリセロールとしてココナードRK(商品名、融点:−5℃、花王社製)60gと、ステアリン酸ブチル(融点:20℃、炭素数20、関東化学社製)70gと、ミリスチン酸ブチル(融点:5℃、炭素数18、和光純薬工業社製)10gとマリーゴールド0.5gとを混合し、これらの混合液を調整した。次いで、この混合溶液に、粉レシチン(商品名;SLP−ホワイト、辻製油社製)2gと、ペーストリゾレシチン(商品名;SLP−ペーストリゾ、辻製油社製)15gを溶解して、色素を含んだ油脂混合液を調整した。
フルクトースを57.5質量%、NaClを0.2、1.0、3.0、5.0質量%とした水溶液を使用した以外は実施例1と同様にして乳化物を作製し、それぞれ実施例2〜5の温度管理媒体とした。この場合、実施例2では、水溶液95.82g(別に青色1号を0.1g)、油脂混合液217.75g使用した(水相比30.6質量%)。実施例3では、水溶液97.65g(別に青色1号を0.1g)、油脂混合液217.75g使用した(水相比31.0質量%)。実施例4では、水溶液102.62g(別に青色1号を0.1g)、油脂混合液217.75g使用した(水相比32.0質量%)。実施例5では、水溶液108.07g(別に青色1号を0.1g)、油脂混合液217.75g使用した(水相比33.2質量%)。なお、参考例として、フルクトースを65.0質量%、NaClを5.0質量%とした水溶液を使用した以外は実施例1と同様にして乳化物を作製し、参考例の温度管理媒体とした。この場合、水溶液135.07g(別に青色1号を0.1g)、油脂混合液217.74g使用した(水相比38.3質量%)。
乳化物中にNaClを添加せず、他は上記実施例1、2と同様にして水溶液と油脂混合液を準備した。水溶液102.47g(別に青色1号を0.1g)、油脂混合液217.75g使用(水相比32.0質量%)して比較例1とし、水溶液95.35g(別に青色1号を0.1g)、油脂混合液217.75g使用(水相比30.5質量%)して比較例2として、それぞれの温度管理媒体を製造した。
2価のイオンを生成する電荷中和剤として所定濃度のCaCl2を使用し、フルクトースの濃度を65.0質量%、CaCl2濃度を1.0質量%、3.0質量%、5.0質量%に調製した水溶液(実施例6〜8)、およびフルクトースの濃度を70.0質量%、CaCl2濃度を1.0質量%、3.0質量%に調製した水溶液(実施例9、10)を使用し、他は実施例1と同様にして乳化物を作製し、実施例6〜10の温度管理媒体とした。この場合、実施例6では、水溶液116.53g(別に青色1号を0.1g)、油脂混合液217.76g使用した(水相比34.9質量%)。実施例7では、水溶液125.24g(別に青色1号を0.1g)、油脂混合液217.75g使用した(水相比36.5質量%)。実施例8では、水溶液135.08g(別に青色1号を0.1g)、油脂混合液217.74g使用した(水相比38.3質量%)。実施例9では、水溶液136.61g(別に青色1号を0.1g)、油脂混合液217.75g使用した(水相比38.6質量%)。実施例10では、水溶液148.41g(別に青色1号を0.1g)、油脂混合液217.75g使用した(水相比40.5質量%)。なお、乳化物を作製する際に水溶液と油脂混合液とを混合するための乳化速度は3500rpmとした。
乳化物中にNaClを添加せず、他は上記実施例6〜10と同様にして水溶液と油脂混合液を準備した。水溶液115.78g(別に青色1号を0.1g)、油脂混合液217.75g使用(水相比34.7質量%)して比較例3とし、水溶液132.07g(別に青色1号を0.1g)、油脂混合液217.74g使用(水相比37.8質量%)して比較例4として、それぞれの温度管理媒体を製造した。
糖類(フルクトース)の代わりに糖アルコールであるグリセリンを使用した。グリセリンの濃度を69質量%、CaCl2濃度を0.1質量%に調製した水溶液72.4gに青色1号を0.0239g加え、この色素を含んだ水溶液を攪拌しながら、実施例1と同じ油脂混合液217.75gを少しずつ加えた(水相比25.0質量%)。油脂混合液を全量加えた後、乳化機により2500rpmで4.5分間、室温にて、上記水溶液と油脂混合液の混合物を攪拌することにより乳化させた。また、この乳化物0.3g〜0.5g程度の量を20×20mmの透明なポリエチレン製軟包材に充填して密封し、実施例11、12の温度管理媒体とした。
上記実施例1の、フルクトースを60.0質量%、NaClを3質量%に調製した水溶液を使用して作製した乳化物を透明なポリエチレン製軟包材に充填して密封した温度管理媒体を3℃の環境で冷却し、常温(23℃程度)で透明であった乳化物の油相を凍らせて(結晶化させて)不透明とし、次に実施例1と同様に勾配昇温した。
Claims (9)
- 常温にて液状で、かつ、所定温度まで冷却すると凝固し、該凝固した状態から昇温することにより融解して相分離する乳化物を備えた温度管理媒体であって、
前記乳化物は、水、油脂、乳化剤、多価アルコール、及び電荷中和剤を含み、水、油脂、乳化剤、多価アルコール、及び電荷中和剤の総量に対する水、多価アルコール、及び電荷中和剤の合計量の割合である水相比が10〜50質量%である、温度管理媒体。 - 前記電荷中和剤は、Na+、K+、Ca2+、Mg2+、Cl−、H2PO4 −、HPO4 2−、HCO3 −のうち少なくとも一つのイオンを生成するイオン化合物である、請求項1に記載の温度管理媒体。
- 前記多価アルコールが、糖類及び/または糖アルコールである、請求項1または2に記載の温度管理媒体。
- 前記糖類は、単糖類及び二糖類からなる群から選ばれる1種または2種以上の糖類である、請求項3に記載の温度管理媒体。
- 前記水、多価アルコール、及び電荷中和剤を含む水相における前記多価アルコールの濃度が15〜80質量%である、請求項1から4のいずれか一項に記載の温度管理媒体。
- 色素および抗菌剤をさらに含む請求項1から5のいずれか一項に記載の温度管理媒体。
- 前記乳化物を構成する、水、多価アルコール、及び電荷中和剤を含む水相と乳化剤及び油脂を含む油相との屈折率の差が、10Brix%以内である、請求項1から6のいずれか一項に記載の温度管理媒体。
- 常温にて液状で、かつ、所定温度まで冷却すると凝固し、該凝固した状態から昇温することにより融解して相分離する乳化物を備えた温度管理媒体であって、
前記乳化物は、水、油脂、乳化剤、糖アルコール及び電荷中和剤を含み、水、油脂、乳化剤、糖アルコール及び電荷中和剤の総量に対する水、糖アルコール及び電荷中和剤の合計量の割合である水相比が10〜50質量%である、温度管理媒体。 - 前記糖アルコールがグリセリンである、請求項8に記載の温度管理媒体。
