Claims (6)
- 窒素源及び炭素源を含む原料と水とを使用して発酵前液を調製する発酵前工程と、
前記発酵前液に酵母を添加してアルコール発酵を行う発酵工程と、
を含む発泡性アルコール飲料の製造方法であって、
前記発酵前工程において、前記原料は1U/g以上、40U/g以下のラッカーゼを含み、前記原料と前記水とを使用して、まず原料液を調製し、次いでラッカーゼによる酵素処理を行い、その後、煮沸処理を行って、前記発酵前液を調製する
ことを特徴とする発泡性アルコール飲料の製造方法。 - 前記原料は麦芽をさらに含む
ことを特徴とする請求項1に記載された発泡性アルコール飲料の製造方法。 - 前記発酵前工程において、前記原料と前記水とを使用して、まず原料液を調製し、次いで糖化処理とともにラッカーゼによる酵素処理を行い、その後、煮沸処理を行って、前記発酵前液を調製する
ことを特徴とする請求項2に記載された発泡性アルコール飲料の製造方法。 - 前記原料はホップをさらに含む
ことを特徴とする請求項1乃至3のいずれかに記載された発泡性アルコール飲料の製造方法。 - 前記原料はカタラーゼを含まない
ことを特徴とする請求項1乃至4のいずれかに記載された発泡性アルコール飲料の製造方法。 - 前記原料は、大麦リポキシゲナーゼ−1欠失大麦から調製された麦芽を含む
ことを特徴とする請求項1乃至5のいずれかに記載された発泡性アルコール飲料の製造方法。
