Abstract
Description
アントシアニンとヒスチジンを混合し、所定時間放置後に残存するアントシアニン量を測定することにより、アントシアニンの安定性に対するヒスチジンが与える影響について測定した。

図1(A)に示すように、ヒスチジンをアントシアニンに対して0.001〜1.0の範囲で添加することによって、ヒスチジンを全く含まないサンプル(図1(A)中、0で表す)に比べ、試験溶液を調整後の時間経過に伴う吸光度比の減少が小さい。ヒスチジンがアントシアニン1に対して0.001の場合には、吸光度の減少抑制効果はわずかであるが、再現性のある効果が認められた。したがって、ヒスチジンがアントシアニンに対して質量比0.001以上であれば、安定化の効果を得ることができる。
アントシアニンとアスコルビン酸を混合し、所定時間放置後に残存するアントシアニン量を測定することにより、アントシアニンの安定性に対するアスコルビン酸が与える影響について測定した。
ヒスチジン、チロシン、トレオニン、アルギニン等、いくつかのアミノ酸は抗酸化活性を備えていることが知られている(特許文献7)。そこで、ヒスチジンのアントシアニンに対する作用が抗酸化活性によるものか解析するために、これら抗酸化活性を備えているアミノ酸のデルフィニジン系アントシアニンに対する退色抑制効果を測定した。
低濃度のアスコルビン酸が、アントシアニンの安定化に対して効果を示したことから、次に、ヒスチジンとアスコルビン酸を同時に添加した場合の効果を解析した。
ビルベリーはアントシアニンを含有する植物の中でも、特にアントシアニン含有量が高い。そのため、アントシアニンを健康食品やサプリメントとして摂取する場合に利用価値が高い。また、アントシアニンの中でもデルフィニジン系アントシアニンが多く含まれている。そこで、ヒスチジン及びアスコルビン酸のビルベリー抽出物中のアントシアニンに対する安定化効果の検討を行った。

- アントシアニン含有素材の抽出物のサプリメントとして用いるアントシアニン含有組成物であって、
アントシアニンと、
前記アントシアニンに対して、
0.01〜1.0の範囲の質量比のヒスチジン及び0.001〜0.05の範囲の質量比のアスコルビン酸を含むことを特徴とするサプリメント用アントシアニン含有組成物。 - 請求項1に記載のアントシアニン含有組成物であって、
前記アントシアニンはデルフィニジン系アントシアニンであることを特徴とするサプリメント用アントシアニン含有組成物。 - 請求項1に記載のアントシアニン含有組成物であって、
前記アントシアニンがビルベリーエキス抽出物由来のアントシアニンであり、
該ビルベリーエキス抽出物中のアントシアニンに対して、
0.1〜1.0の範囲の質量比のヒスチジンと
0.03〜0.05の範囲の質量比のアスコルビン酸を含むことを特徴とするサプリメント用アントシアニン含有組成物。 - ヒスチジン及びアスコルビン酸を有効成分とし、
アントシアニンに対して、
0.01〜1.0の範囲の質量比のヒスチジン及び0.001〜0.05の範囲の質量比のアスコルビン酸を含有することを特徴とするアントシアニン安定化剤。 - アントシアニン組成物の安定化方法であって、
