Description
年中キムチの品質変化をモニタリングして品質変化の原因を把握して改善するために年中キムチ品質の変化を確認した。
前記実施例1と同じように年中キムチ品質変化の原因分析とこれを通じて冬に製造しておいしく良く熟したキムチで分離した乳酸菌菌株をCJGN34で菌株名を定めて前記の菌株を1.5%寒天(agar)が含まれたMRS固体培地(Difco、USA)に塗抹して30℃で24時間培養した後純粋分離したことが確認された集落をループ(loop)で取ってMRS液体培地(Difco、USA)で30℃18−24時間培養した。
前記実施例1で分離した菌株の安全性を評価するために韓国バイオベンチャー協会団体標準(Collective standard of Korea Biotechnology Industry Organization)で提示した安全性評価試験法により溶血現象検査、ゼラチン液化反応検査、有害代謝産物(アンモニア)生成確認、フェニルアラニン脱アミン検査を遂行した。その結果を下記表3に示した。
本発明のロイコノストック シトレウムCJGN34菌株をスタータで適用するために菌株の培養液または菌体組成物を製造したし、培養液と菌体組成物は、次のように製造されることができる。
本発明のロイコノストック シトレウムCJGN34菌株をキムチ以外の醗酵食品のスタータで適用するために実施例4と同じ方法で菌株の培養液または菌体組成物を製造したし、これをスタータとして醗酵食品を製造した。醗酵食品はきゅうり、だいこん、にんじん、たまねぎ、にんにく、唐辛子、はくさいなど多様な原料を活用して製造することができるし、たくあんのような塩漬け食品に適用して醗酵たくあんを製造することができる。
前記実施例1で同定されたロイコノストック シトレウムCJGN34(Leuconosto c citreum CJGN34)を医薬品、食品、飼料、飼料添加剤または化粧品の原料で適用するために大量生産して実施例4と同じ方法で菌体組成物を製造した。
Claims (9)
- 冬季キムチ優占種から分離した絶対異形醗酵菌であり、D−アラビノース及びグルコネートの糖醗酵が陰性であり、無胞子及び非運動性球菌であり、増殖温度が15〜45℃の温度範囲で年中均一な品質保持が可能であるキムチ醗酵用乳酸菌株ロイコノストック シトレウムCJGN34(Leuconostoc citreum CJGN34) KCTC 10974BP。
- 請求項1に記載のロイコノストック シトレウムCJGN34(Leuconostoc citreum CJGN34) KCTC 10974BPを有効成分で含有する食品醗酵用スタータ(starter)組成物。
- 請求項1に記載のロイコノストック シトレウムCJGN34(Leuconostoc citreum CJGN34) KCTC 10974BPの菌株培養液から回収した菌体を、デキストラン5%及び脱脂粉乳10%の凍結保護剤を使って−40℃以下で凍結した後に30〜37℃で乾燥し、その後ミキサーで粉体化して生菌粉末を得て、この生菌粉末をキムチ全体の重量に対し0.001%〜3%の重量となるようにキムチに添加してキムチ製造に適合した生菌数に合わせられ、保管に適合した葡萄糖、乳糖及び脱脂粉乳のうちの一つ以上の賦形剤をキムチと混合してキムチを密封することによって得られるキムチ醗酵用スタータ組成物。
- 請求項3に記載のキムチ醗酵用スタータ組成物によって製造されたキムチ。
- 請求項2に記載の食品醗酵用スタータ組成物又は請求項3に記載のキムチ醗酵用スタータ組成物で醗酵されたキュウリ、ダイコン、ニンジン、玉ネギ、ニンニク及び唐辛子のうちいずれか一つの塩漬け食品。
- 請求項1に記載のロイコノストック シトレウムCJGN34(Leuconostoc citreum CJGN34) KCTC 10974BPの菌株を有効成分で含有する乳酸菌化粧料組成物。
- 請求項1に記載のロイコノストック シトレウムCJGN34(Leuconostoc citreum CJGN34) KCTC 10974BPの菌株を有効成分で含有する乳酸菌醗酵食品組成物。
- 請求項1に記載のロイコノストック シトレウムCJGN34(Leuconostoc citreum CJGN34) KCTC 10974BPの菌株を有効成分で含有する乳酸菌飼料添加剤。
- 請求項8に記載の乳酸菌飼料添加剤を含む動物飼育用乳酸菌飼料。
