Claims (2)
- 鮭、鱒の卵巣を50グラム以下の一口大に細かくし塩蔵又は醤油調味で熟成させたおにぎりの具材となる筋子を、容器の中に縦横整列して一層に敷き詰めフィルム状の蓋で密封する容器封入工程と、
前記容器を温水循環シャワー装置の複数段の殺菌棚に上下の間隔をあけて並べ、各段の間隙に60度〜75度の温度で5〜30分の間の温水シャワーを行なって加熱する加熱殺菌工程と、
前記温水循環シャワー装置の冷水シャワーにより冷蔵温度まで冷却する冷却工程と、が備えられ、塩蔵熟成された筋子の細菌数を減らしたことを特徴とする低細菌筋子の製造方法。 - 請求項1記載の低細菌筋子の製造方法で製造されたことを特徴とする容器入り低細菌筋子。
