Claims (1)
- 加熱処理原料を用いる冷凍食品におけるかきフライの製造工程において、かきフライとなる使用原料のかきは、殻付きかきであって、これを、水揚げ後、加熱処理手段を、短時間内に、130°Cの水蒸気で7分間加熱殺菌し、該加熱殺菌された殻付きかきを、冷却清浄海水を用いて20分間で4°Cまで冷却した、殻付きかきを、ムキ身加工した加熱処理原料を用いることを特徴とする冷凍食品におけるかきフライの製造方法。
