Description
330kgの大豆を洗浄器に入れて、40リットルの冷水にて噴霧洗浄し、不純物を除去する。90℃に予め加熱された水を調理用タンクに加えて、洗浄した大豆を調理用タンクにスクリュコンベヤを用いて供給する。調理器の水のレベルを1500リットルにして、97℃に加熱する。大豆を大気圧下、95℃にて3時間調理し、その際に均質性を保証するために攪拌機を用いて65rmpの速度にて攪拌する。大豆組織がある程度柔らかくなった後に、3000リットル/時間のポンプを使用してタンクの底部から頂部まで大豆を循環させ、調理された大豆をNo.1粉砕機(TylerNo.6メッシュ)まで搬送し、2400rpmにて該大豆を粉砕してスラリーにする。次に、ジャケット付ヒータを使用して80℃にて30分間スラリーを加熱し続け、トリプシン阻害剤、リポオキシゲネーセ、大豆アグルチニン及びフィチン酸の活性を大きく低減させ、大豆細胞を分離する。次に、スラリーを3000リットル/時間のポンプにて循環させた後に、No.2の粉砕機(TylerNo.48のメッシュ、3600rpm)を使用して、さや、へそ、胚軸及び子葉を含む大豆の全ての構成要素を所定のサイズの顆粒に微粉砕し、そして、大豆の単細胞が顕微鏡下に観察された(図1に示されるように)。図1の細胞が損傷を受けていないことは明らかである。次に、噴霧乾燥時まで、大豆スラリーの温度を70乃至80℃に維持する。アトマイザを使用して、440kg/時間の蒸発速度にてスラリーを乾燥し、283kgの粉末が得られた。完成した製品はなお、2乃至3%の水分を含んでいる。最終的に粉末を27度以下に冷却し、該粉末をアルミニウム製のバッグに梱包し、その際、バッグ当り9.07kg(20lb)となるようにした。
本発明の好ましい実施形態を実施例において開示してきた。その他の実施形態を含む、本発明の精神を逸脱しない全ての修正及び変更並びに添付された請求の範囲は、保護された範囲及び本発明の特許請求の範囲内にてとどめられるものである。
Claims (9)
- 全大豆乳を製造する方法であって、
(a)前記大豆を洗浄して不純物を除去する工程と、
(b)前記洗浄した大豆をタンクに供給するとともに水を加えて調理する工程と、
(c)ポンプを使用して、大豆を前記タンクの底部から頂部まで繰り返し循環させて、該大豆をホモジナイズする工程と、
(d)粉砕機を使用して前記調理した大豆をスラリーに粉砕する工程と、
(e)前記工程(d)において粉砕した大豆スラリーをタンク内に一定の時間保持する工程と、
(f)前記ポンプを再び使用して、大豆スラリーを前記タンクの底部から頂部まで繰り返し循環させて、該スラリーをホモジナイズする工程と、
(g)微粉砕機を使用して、前記大豆スラリーを微粉砕化して、大豆の単細胞を含む全大豆乳を得る工程と、
からなる方法。 - 前記大豆は酵素或いは化学反応剤を使用することなく加工される、請求項1に記載の方法。
- 前記工程(b)において、加えられるべき水は大豆の重量の3.5乃至6.0倍である請求項1に記載の方法。
- 前記工程(b)において、調理工程は70乃至100℃の温度にて3乃至6時間実施される請求項1に記載の方法。
- 前記工程(d)において、粉砕機は700乃至3500rpmの速度にて回転する請求項1に記載の方法。
- 前記工程(d)において粉砕された大豆スラリーは、前記工程(e)において70乃至100℃にて10分間乃至2時間タンク内に保持される請求項1に記載の方法。
- 前記工程(d)において粉砕された大豆スラリーは前記工程(e)において80℃にて30分間タンク内に保持される請求項1に記載の方法。
- 前記工程(g)において、微粉砕された大豆は100μm乃至300μmの範囲の大きさを有する請求項1に記載の方法。
- 全大豆乳粉末を得るために、前記工程(g)の後に噴霧乾燥工程を更に含む請求項1に記載の方法。
