Abstract
本発明は食肉類や魚卵類の加工時に発色剤として用いられる亜硝酸塩、硝酸塩等の食品添加物を使用しないで、発色効果を得られる天然発色物を提供する。
【解決手段】
食肉類の加工の際、野菜類に含有する、硝酸塩類や柑橘類に含有するアスコルビン酸さらに蜂蜜に含有する還元糖を利用し発色させる。

Claims (1)
- 食品添加物を使用しない食肉加工品の製造方法であって
硝酸イオンを含む野菜を粉砕する工程と、
上記工程で粉砕された硝酸イオンを含む野菜と、硝酸イオンを還元するL−アスコルビン酸を含む果実、パセリ、ブロッコリー、京菜、キャベツ、又は還元糖を含む蜂蜜のいずれか1つまたは組み合わせた食材を混合して塩漬液を製造する工程と、
作成された塩漬液に食肉を浸して真空状態で塩漬する工程と、
を有する食肉加工品の製造方法
