Description
30ECでの全乳および脱脂粉乳中のセレウス菌に対する抗菌性組成物の抑制
全乳および脱脂粉乳を滅菌し、塩化2,3,5−トリフェリルテトラゾリウム(TTC)を添加し(色の変化により増殖を示すため)、得られた混合物に約4〜5ログ細胞/mlでのセレウス菌(好気性胞子形成体)の胞子を接種した。抗菌性組成物(CB−1)およびノバシン(商標)対照品(対照)を10%原液として添加した(対照はCB−1の4倍のナイシン量を含んだ)。抑制を所定の時間にわたり増殖なしのための最小濃度により示し、以下の表2に表す。
25ECでの全乳および脱脂粉乳中のL.モノサイトゲネス菌に対する抗菌性組成物の抑制
全乳および脱脂粉乳を滅菌し、塩化2,3,5−トリフェリルテトラゾリウム(TTC)を添加し(色の変化により増殖を示すため)、得られた混合物に約4〜5ログ細胞/mlでのL.モノサイトゲネス菌ATCC19115(増殖性グラム陽性病原体)を接種した。抗菌性組成物(CB−1)およびノバシン(商標)対照品(対照)を10%原液として添加した(対照はCB−1の4倍のナイシン量を含んだ)。抑制を所定の時間にわたり増殖なしのための最小濃度により示し、以下の表4に表す。
30ECでの全乳中のC.スポロゲネス菌に対する抗菌性組成物の抑制
全乳を滅菌し、塩化2,3,5−トリフェリルテトラゾリウム(TTC)を添加し(色の変化により増殖を示すため)、得られた混合物に約4〜5ログ細胞/mlでのスポロゲネス菌(嫌気性非病原性の胞子形成体)を接種した。抗菌性組成物(CB−1)およびノバシン(商標)対照品(対照)を10%原液として添加した(対照はCB−1の4倍のナイシン量を含んだ)。次に、これらの組成物に対するスポロゲネス菌の皿集計数を、30ECで24時間にわたり培養したTSA寒天プレート上で得た。その結果を以下の表6に示す。
食品中の毒素産生を遅らせるための抗菌性組成物の有効性
約100個の胞子/グラムを有するタンパク質分解性C.ボツリヌス菌胞子(嫌気性の胞子形成性病原体)の10個の菌株混合物に、88℃で10分間にわたり食物と共に熱ショックを与えた。一部の食品は高脂肪含量を有し、アルフレード・ソース、即席食品(ソース漬けの調理された鶏の胸肉)、即席スープ、および新鮮パスタを含んだ。接種食物試料を15℃または27℃で培養した。抗菌性組成物(CB−1)、ノバシン(商標)、および一つのケースにおいてリゾチームなしのCB−1を10%原液として添加した(ノバシン(商標)処理はCB−1およびリゾチームなしのCB−1と同じ量のナイシンを含んだ)。非処理食物試料を対照品として用いた(対照)。3重の試料を、時間0および処理しようとする特定の食物、そのpH、その温度、などに応じて変わる各抽出間隔で検定した。ABE3価ボツリヌス抗毒素により確認されるボツリヌス菌の存在を検査するために、標準マウス検定法を用いた。これら食品中の毒素産生を遅らせることにおけるこれら抗菌性組成物の有効性を、以下の表7〜10に表す。
Claims (26)
- a)ランチビオティック;
b)溶菌酵素;および
c)有機酸またはその塩、と組合せた少なくとも1種のプロピオニバクテリア代謝産物を含む、食物中の有害細菌に対する静菌および殺菌活性を有する食物処理組成物。 - 前記ランチビオティックがナイシンおよびラクチシンからなる群から選択される請求項1に記載の組成物。
- 溶菌酵素がリゾチームおよびキチナーゼからなる群から選択される請求項1に記載の組成物。
- 有機酸またはその塩が、酢酸、乳酸、クエン酸、プロピオン酸、二酢酸ナトリウム、酢酸ナトリウム、酢酸カリウム、乳酸ナトリウム、乳酸カリウム、クエン酸ナトリウム、クエン酸カリウム、プロピオン酸ナトリウム、プロピオン酸カリウム、およびそれらの混合物からなる群から選択される、請求項1に記載の組成物。
- 有機酸またはその塩が二酢酸ナトリウムである請求項4に記載の組成物。
- さらに、追加の抗菌剤、キレート剤、天然の調味料、合成の調味料、風味材、染料、着色剤、ビタミン、ミネラル、栄養剤、酵素、および結合剤からなる群から選択される1種以上の成分を含む、請求項1に記載の組成物。
- a)ランチビオティック;
b)溶菌酵素;および
c)有機酸またはその塩、
と組合せたプロピオニバクテリア代謝産物を含むグラム陽性菌およびグラム陰性菌の両方に対する増殖抑制および殺菌効果を実証する組成物の細菌増殖抑制性および殺菌性有効量を該食品の1以上の表面に塗布することにより、食品上の細菌の増殖を抑制すると共にそれを殺すための方法。 - 組成物が食品中のグラム陽性菌の量を減少させる請求項7に記載の方法。
- グラム陽性菌がバシラス、クロストリジウム、ブドウ球菌、リステリア、ミクロコッカス、連鎖球菌、ラクトバシラスおよびロイコノストックからなる属から選択される請求項8に記載の方法。
- 細菌が、バシラス属セレウス菌、バシラス属リケニホルミス菌、バシラス属枯草菌、バシラス属耐熱細菌、クロストリジウム属ボツリヌス菌、クロストリジウム属ウエルシュ菌、クロストリジウム属スポロゲネス菌、クロストリジウム属チロブチリカム菌、クロストリジウム属プトレファシエンス菌、黄色ブドウ球菌およびリステリア属モノサイトゲネス菌からなる群から選択される、請求項9に記載の方法。
- 組成物が食品中のグラム陰性菌の量を減少させる請求項7に記載の方法。
- グラム陰性菌がエシェリキア、カンピロバクター、ビブリオ、ペクトバクテリア、シュードモナス、およびサルモネラからなる属から選択される請求項11に記載の方法。
- 細菌が大腸菌H7:O157、カンピロバクター属ジェジュニ菌、腸炎ビブリオ菌、ペクトバクテリウム属カロトボラム菌、およびシュードモナス属蛍光菌からなる群から選択される請求項12に記載の方法。
- 食品が、乳製品、果物、野菜、果物誘導品、野菜誘導品、穀物、穀物誘導品、肉、鶏肉、水産物、即席食品、調製サラダ、サラダドレッシング、調味料、パスタ、スープ、無菌加工食品、およびそれらの混合物からなる群から選択される請求項7に記載の方法。
- 食品が1%を越える脂肪、脂質、または油溶解性材料を含有する請求項7に記載の方法。
- 食品が脂肪性乳化液を含む請求項7に記載の方法。
- 組成物が脂肪性乳化液の水相中に組み込まれる請求項16に記載の方法。
- 組成物が食品表面に塗布されるか、またはその後食品表面と接触させられる食物包装材料に塗布されるかのいずれかである、請求項7に記載の方法。
- 組成物が浸漬、リンス、注射、スプレー、または混合により食品に適用される請求項7に記載の方法。
- 組成物がマリネ、パン粉づけ、調味料拭き、グラッセ、または着色剤混合物の成分とし
て食品に適用される請求項7に記載の方法。 - 組成物が食品の亜致死加工処理と組合せて用いられる請求項7に記載の方法。
- 亜致死加工処理が熱、ガンマ照射、高圧力、超音波、オゾン、亜硝酸塩、およびそれらの組合せからなる群から選択される請求項21に記載の方法。
- グラム陽性菌およびグラム陰性菌の両方に対する有効性を実証する請求項1〜6のいずれか1項に記載の組成物を、1以上のその表面上に塗布した結果として低減した生細菌母集団を有する食品。
- 乳製品、果物、野菜、果物誘導品、野菜誘導品、穀物、穀物誘導品、肉、鶏肉、水産物、即席食品、調製サラダ、サラダドレッシング、調味料、パスタ、スープ、無菌加工食品、およびそれらの混合物からなる群から選択される請求項23に記載の食品。
- 組成物が食品の亜致死加工処理と組合せて用いられる請求項23に記載の食品。
