Description
試験・評価用の酸性乳飲料の調製は、以下のようにして行った。
上記製造処方で用いたカルボキシメチルセルロース・ナトリウム塩について、エーテル化度及び2%水溶液粘度の測定を、以下のようにして行った。
ここで、Aは、滴定に要した0.1N硫酸のml数をその力価により補正したものである。
前述のように1週間放置した後、乳酸菌飲料の状態について、目盛り付き試験管中に静置したまま、肉眼で観察を行った。そして、目盛り付き試験管中の100mlの溶液につき、上澄み部分の量、及び、沈澱部分の量を、試験管の目盛りから読み取った。また、上澄み及び沈澱以外の部分について異常がないかを肉眼により観察して評価した。そして、全く異常が見られず均一に分散している場合を「異常なし」、これよりは均一性に劣るが特に凝集状の浮遊物といった不均一性も見られない場合を「特になし」、凝集状の浮遊物が多少なりとも認められる場合を「凝集気味」とした。
酸性乳飲料を作製して得られた結果について、添加するカルボキシメチルセルロース・ナトリウム塩その他の製造条件とともに、下記表1にまとめて示す。
Claims (2)
- 乳固形分が1〜8%、かつpHが3.0〜6.5の酸性乳飲料を製造する方法であって、乳化状態を安定化させる安定剤としてエーテル化度が0.7〜1.0であって、かつ、2%水溶液粘度が20〜1000mPa・sであるカルボキシメチルセルロース・ナトリウム塩を用いるとともに、
乳原料及び酸からなる第1乳成分水溶液と、乳原料を発酵させた生成物からなる第2乳成分水溶液とをそれぞれ別個に調製し、この際、前記カルボキシメチルセルロース・ナトリウム塩を、前記第1乳成分水溶液中に60〜80%が含まれ、前記第2乳成分水溶液中に20〜40%が含まれるように配分しておき、この後、前記第1乳成分水溶液と前記第2乳成分水溶液とを混合して均質化することを特徴とする酸性乳飲料の製造方法。 - 前記第1乳成分水溶液中の乳固形分と、前記第2乳成分水溶液中の乳固形分との重量比が1/9〜9/1であることを特徴とする請求項1に記載の酸性乳飲料の製造方法。
