Abstract
Description

実施例1
チロシンおよびカフェインで強化されたビールの調製
チロシンおよびカフェインで強化されたビールを、下記工程を含むプロトコルを用いて調製した:
(i)大麦を粉砕する工程;
(ii)粉砕した大麦を水に50−75℃の温度で約1時間浸す工程;
(iii)カフェインを添加する工程;
(iv)粉砕した大麦およびカフェインの混合物をボイラーに移す工程;
(v)ホップをボイラー中の混合物に添加し、混合物を約1時間煮沸する工程;
(vi)煮沸質量(本明細書では「マスト」と呼ばれる)を、マストを100℃から約20℃まで冷却する熱交換器を介して発酵槽に移す工程;
(v)酵母を冷却したマストに添加する工程;
(vi)マストを14〜16日の期間発酵させ、ビールを得る工程;

(ii)100mg/L−5gr/Lの濃度までチロシンを添加する工程;

(iv)マストを発酵槽内で数週間、4−16℃の温度で発酵させる工程;
(v)ラッキング:リカーを新しい大だる中に吸い上げ、それを死んだ酵母および望ましくない材料から分離する工程;

チロシンおよびカフェインで強化されたシングルモルトウイスキー
チロシンおよびカフェインで強化されたシングルモルトウイスキーを下記工程に従い調製する:
(i)大麦麦芽を破砕する工程;
(ii)マッシング:破砕大麦麦芽を糖化槽に移し、熱水を3段階で添加し、温度を上昇させる工程(約60℃で開始し、それから約75℃、最後に、約90℃)。麦汁(マッシング中に抽出される麦芽液)をウォッシュバックに移す;
(iii)麦汁を発酵温度まで冷却する工程(約4−25℃);
(iv)ウイスキー酵母を添加する工程;
(v)冷却した麦汁を数日までの間発酵させ、「ウォッシュ」を受け取る工程;

(ii)マッシュを酵素活性温度まで冷却する工程;

(i)3カップの糖、2カップの水および大さじ1杯のバニラ抽出物をソースパン内で合わせる工程;
(ii)約30分間体積が半分に減るまで煮沸し、攪拌する工程;
(iii)100−400mgのチロシンおよび約100grのインスタントコーヒーを添加し、均一になるまで攪拌し、シロップ混合物を冷却させる工程;
(iv)シロップを750mlの40%ABVウォッカと密閉1リットル瓶中で合わせ、よく振盪させる工程;
(v)任意で、180mgまでのカフェインを添加する工程;
(vi)10日間冷暗所で沈降させる工程;
(vii)強化リキュールを漉す/濾過する工程;ならびに
(viii)強化リキュールを瓶詰めする工程。
2相アルコール効果スケール(BAES)試験
Tyrなどの神経伝達物質前駆体および任意で、カフェインなどの精神刺激物質で強化されたビールを消費することにより引き起こされる刺激および鎮静効果、対、対応する非強化ビールによりもたらされる刺激および鎮静効果を、自己申告参加者において、2相アルコール効果スケール(BAES)に基づくアンケートを用いて評価した。BAESは、別々の明確な構成概念として、アルコールの刺激および鎮静効果を測定するように設計された、信頼できる、確かな体系的14−項目自己申告スケールである。BAESおよび6項目のみを含むその簡易版(B−BAES)は、例えば、Rueger and King, 2013 (Alcohol Clin Exp Res. 37(3): 470−476;およびその中で引用される参考文献)において記載される。
健康な非アルコール依存者198人の社交的飲酒者が試験に参加した。参加者はより広い地域から、例えば、ウェブサイトに置かれた広告を介して募った。各参加者の適格性は下記判断基準に依存した:(i)年齢18−60歳;(ii)アルコール嗜癖の病歴なし;(iii)刺激または鎮静作用を有する薬物療法を受けていない;(iv)アルコールの中〜低の規則的消費。
試験は2−セッション(2日)試験とし、この場合、第2セッション(日)は、第1セッションから少なくとも1週間離した。参加者には、5.2%のアルコールを有する強化(すなわち、Tyrおよびカフェインを含む)または非強化ビールのいずれかを与えた。

- 前記ポジティブな精神賦活効果は多幸感であり、前記ポジティブな向精神効果は、(i)例えば、働く、学習する、および報酬行動に参加するより高い動機づけ;(ii)改善された専念および集中;(iii)より高い自信;(iv)覚醒;(v)覚醒状態;(vi)上昇した注意力;(vii)改善された創造性および創造的思考(viii)新しい経験に対する好奇心および開放性;(ix)自己実現の感覚、自己卑下;(x)リラクゼーション;(xi)タスク間で効率的に注意を切り換える改善された能力;(xii)改善された社交性および外向挙動(xiii)より良好な認知および/または精神機能;ならびに(xiv)幸福の情動的および身体的感覚からなる群より選択される1つ以上の効果である、請求項18に記載のアルコール食品または強化アルコール飲料。
- 強化ビール、ワイン、リンゴ酒、スピリッツまたはアルコポップからなる群より選択される、請求項4〜19のいずれか一項に記載の強化アルコール飲料。
- 強化エール、スタウト、ポーター、またはラガーから選択される強化ビールである、請求項20に記載の強化アルコール飲料。
- 強化辛口赤ワイン、強化辛口白ワイン、強化やや辛口赤ワイン、強化やや辛口白ワイン、強化ロゼワイン、強化デザートワイン、強化ポートワイン、強化シャンパン、強化発泡性ワインおよび強化ベルモットから選択される強化ワインである、請求項20に記載の強化アルコール飲料。
- 強化ブランデー、リカー、日本酒、ウーゾ、アラック酒、ラム、ウォッカ、テキーラ、シュナップス、ウイスキー、ジン、コーディアル、カシャッサまたはスリボビッツから選択される強化スピリッツである、請求項20に記載の強化アルコール飲料。
- 強化ビールクーラー、強化ワインクーラーおよび強化スピリッツクーラーから選択される強化リンゴ酒または強化アルコポップである、請求項20に記載の強化アルコール飲料。
- 前記強化ビール、強化ワイン、強化スピリッツ、強化アルコポップまたは強化リンゴ酒は、1つ以上の神経伝達物質前駆体を、前記飲料に、それぞれ、対応する非強化ビール、ワイン、スピリッツ、アルコポップ、およびリンゴ酒によりもたらされる効果を超えるポジティブな精神賦活および向精神効果を働かせる能力を付与する一方、中毒効果を実質的に最小に抑える量で含む、請求項20〜24のいずれか一項に記載の強化アルコール飲料。
- チロシンを約0.1mg/ml〜約1.0mg/mlまたは約0.1mg/ml〜約5.0mg/mlの量で含む、請求項20〜25のいずれか一項に記載の強化アルコール飲料。
- カフェインを約10mg/L〜約750mg/Lの量で含む、請求項20〜26のいずれか一項に記載の強化アルコール飲料。
- 基礎液体をアルコールおよび1つ以上の神経伝達物質前駆体、および任意で、1つ以上の精神刺激物質と合わせることを含む、請求項1〜27のいずれか一項に記載の強化アルコール飲料の調製のためのプロセス。
- 香味剤、着色剤、芳香剤、CO2、酵素、粘度改変剤、発泡剤、消泡剤および保存剤から選択される少なくとも1つのサプリメントの添加をさらに含む、請求項28に記載のプロセス。
