Claims (11)
- 下記の工程を含む、食品を加工するための方法:
a)食品を提供する工程、
b)食品を、5質量%から50質量%のデキストリンを含む、顆粒又は乾燥粉末で被覆する工程、
c)被覆した食品を、水又は水蒸気に、0.1秒から10秒の間、曝す工程、及び
d)水若しくは水蒸気に曝した食品を、焼き、油で揚げ、又はゆでる工程。 - 顆粒が、0.1mmから5mmの平均粒子径を有する、請求項1に記載の方法。
- 顆粒又は乾燥粉末が、さらに、でんぷん及び/又は小麦粉を含む、請求項1又は2に記載の方法
- 食品が、ジャガイモ、ジャガイモ由来製品、肉、果物、加工肉、ひき肉、野菜、ペストリー生地、パン生地、及びそれらの組み合わせからなる群から選ばれる、請求項1から3のいずれかに記載の方法。
- 工程(a)における食品を提供する工程が、疎水性のプレコートを有する食品を提供することを含む、請求項1から4のいずれかに記載の方法。
- 食品が、湯浴中での前処理に供された冷凍食品である、請求項1から5のいずれかに記載の方法。
- 水蒸気が湯気である、請求項1から6のいずれかに記載の方法。
- 請求項1から7のいずれかに記載の方法により得られる加工食品。
- 請求項8に記載の加工された食品をオーブン又は電子レンジで調製する工程を含む、クリスピー感のある食品を提供するための方法。
- 0.1mmから5mmの平均粒子径を有し、5質量%から50質量%のデキストリン、小麦粉、及びでんぷんを含む顆粒。
- 電子レンジ又はオーブンにより調製されるクリスピー感のある食品を提供するための、請求項10に記載の顆粒、又は5質量%から50質量%のデキストリンを含む、乾燥粉末若しくは0.1mmから5mmの平均粒子径を有する顆粒の使用。
