Abstract
Description
素材1〜9のいずれかを使用し、表2上段に示す配合で水に溶解して、各素材を所定の濃度で含有する煮物用調理液を調製した。得られた煮物用調理液は、パウチ包装したうえ、120℃20分加熱処理した。

○:鍋のふちに液がでるが吹きこぼれなし
△:吹きこぼれなし、こげ有り
×:吹きこぼれ有り
素材1〜9のいずれかを使用し、表4上段に示す配合で水に溶解して、各素材を所定の濃度で含有する煮物用調理液を調製した。得られた煮物用調理液は、パウチ包装したうえ、120℃20分加熱処理した。

素材3及び素材6を使用し、表10上段に示す配合で水に溶解して、それら素材を所定の濃度で含有する煮物用調理液を調製した。得られた煮物用調理液は、パウチ包装したうえ、120℃20分加熱処理した。
Claims (6)
- イモ及び/又はマメを煮るための煮物用調理液であって、架橋デンプン、酸化デンプン、及び難消化性デキストリンからなる群から選ばれた1種又は2種以上を、前記イモ及び/又は前記マメを煮るときの濃度にして0.06〜1.2w/w%含有していることを特徴とする煮物用調理液。
- 加熱調理時間が15分以内とされる前記イモ及び/又は前記マメの煮物の調理に用いられる、請求項1記載の煮物用調理液。
- イモ及び/又はマメに、架橋デンプン、酸化デンプン、及び難消化性デキストリンからなる群から選ばれた1種又は2種以上、あるいはそれを含有させてなる煮物用調理液を、該架橋デンプン、酸化デンプン、及び難消化性デキストリンからなる群から選ばれた1種又は2種以上の濃度が前記イモ及び/又は前記マメを煮るときの濃度にして0.06〜1.2w/w%となるように添加して加熱調理を行うことを特徴とするイモ及び/又はマメの煮物の製造方法。
- 前記加熱調理の調理時間が15分以内とされる、請求項3記載のイモ及び/又はマメの煮物の製造方法。
- イモ及び/又はマメを煮る際の吹きこぼれを抑制するための吹きこぼれ抑制剤であって、架橋デンプン、酸化デンプン、及び難消化性デキストリンからなる群から選ばれた1種又は2種以上を有効成分とする吹きこぼれ抑制剤。
- 前記イモ及び/又は前記マメを煮るときに、0.06〜1.2w/w%の濃度になるように添加されて使用される、請求項5記載の吹きこぼれ抑制剤。
