Abstract
Description
(a)パルミトイル基を2位に有するトリグリセリド組成物であって、組成物の全パルミチン酸含有量の少なくとも40重量%がトリグリセリドの2位に結合したパルミトイル基として存在する、組成物;及び
(b)1つ以上のトコフェロール及びパルミチン酸アスコルビルを含む実質的にレシチンを含まない酸化防止剤混合物のブレンドを含み得る。
(i)トリパルミトイルグリセリドを含み、約2〜約14のヨウ素価を有するヤシ油ステアリンを提供すること;
(ii)任意で、パーム油ステアリンを漂白及び脱臭すること;
(iii)パーム油ステアリンを、オレイン酸またはそれらの非グリセリドエステルを用いた酵素的エステル交換に供すること;
(iv)(iii)で得られた生成物からパルミチン酸またはパルミチン非グリセリドエステルを分離すること;そして、
(v)任意で、(iv)で得られた生成物を乾燥分画して、OPOの量を増加させた画分を形成すること、を含む方法によって生成することができる。
(a)本明細書の実施形態のいずれかで定義されるグリセリド、または16個の炭素原子を有する飽和脂肪酸残基ならびに18個の炭素原子及び1個の二重結合を有する不飽和脂肪酸残基を含む脂肪、を分散させることであって、16個の炭素原子を有する飽和脂肪酸残基の少なくとも30重量%は、牛乳(好ましくは全脂肪乳)中の、トリグリセリド中の2位に存在すること;及び、
(b)本発明の実施形態のいずれかに記載の混合物、またはトコフェロール及びパルミチン酸アスコルビルを約5〜約5000ppmの量で含み、レシチンを含まない酸化防止剤混合物を、この分散液に追加すること、を含む方法を提供する。
トリグリセリドOPOを15%超で含有し、2位に結合したパルミトイル基として存在する組成物のパルミチン酸含有量が約55重量%である脂肪相Betapol(登録商標)55(Loders Croklaan BV、Wormerveer、the Netherlands)を含み、トコフェロール(Tocoblend L50 IP; 50%天然混合トコフェロール+50%ヒマワリ油)、パルミチン酸アスコルビル及び/またはレシチン(Ronoxan A)を100〜600ppmの組み合わせた量まで様々な量で含む酸化防止剤混合物を含む、組成物を調製する。脂肪組成物のランシマット誘導期間(RIP)は、120℃でAOCS Cd 12b−92法を用いて測定した。対照として、トコフェロールを100ppmだけ追加し、トコフェロール、パルミチン酸アスコルビル、及びレシチンをそれぞれ300ppm、100ppm、及び100ppmの量で追加して、酸化防止剤がない場合の脂肪組成をRIPで測定した。本発明の組成物実施例4〜7は、追加のレシチンを含まず、100ppmの一定量のパルミチン酸アスコルビルを含有し、トコフェロール含有量を100ppmから500ppmまで変化させた。
酸化防止剤を追加しない場合、組成物のRIPは7.4時間であった。100ppmのトコフェロールを追加すると、RIPは2倍になって14.5時間になった。対照実施例3は3種の酸化防止剤の混合物を含み、他の対照と比較して22時間の延長RIPを与えた。
Claims (15)
- 2位にパルミトイル基を含むグリセリドを少なくとも約15重量%含むグリセリド組成物であって、前記組成物の全パルミチン酸含有量の少なくとも30重量%がグリセリド中の2位に存在し、前記組成物は約1重量%までの全量で1つ以上のトコフェロール及びパルミチン酸アスコルビルを含み、前記組成物は追加のレシチンを含まない、組成物。
- 前記グリセリドが1,3−ジオレオイル−2−パルミトイルグリセロール(OPO)である、請求項1に記載の組成物。
- 前記トコフェロールが、α−トコフェロール、β−トコフェロール、γ−トコフェロール、及びδ−トコフェロール、ならびにそれらの混合物からなる群から選択される、請求項1または2に記載の組成物。
- 前記組成物がリン脂質を含まない、請求項1〜3のいずれか一項に記載の組成物。
- 前記組成物がリン脂質、クエン酸、シトレート、カロテノイド、ローズマリー抽出物及びロスマリン酸などのさらなる酸化防止剤を含まない、請求項1〜3のいずれか一項に記載の組成物。
- 前記組成物がレシチンを含まない、請求項1〜3のいずれか一項に記載の組成物。
- 前記組成物は、前記1つ以上のトコフェロール及びパルミチン酸アスコルビルを1:5〜20:1、より好ましくは1:3〜10:1、及び最も好ましくは1:2〜3:1、例えば2.5:1〜1:1または2:1〜1.5:1の重量比で含む、請求項1〜6のいずれか一項に記載の組成物。
- 前記組成物のランシマット誘導期間(RIP)が22時間超または約30時間である、請求項1〜7のいずれか一項に記載の組成物。
- 請求項1〜8のいずれか一項に記載の組成物を含み、かつレシチンを含まない、乳幼児用調合乳。
- 乳脂肪、ホエータンパク質、炭水化物、ミネラル、ビタミン及びそれらの混合物からなる群から選択される1つ以上の追加成分をさらに含む、請求項9に記載の乳幼児用調合乳。
- 前記乳脂肪が牛乳に由来する、請求項10に記載の乳幼児用調合乳。
- 前記組成物が、例えば約500ppmまでのレシチンなど、レシチンを追加で含有する同じ組成物と比較して、酸化に対してより安定である、請求項9〜11のいずれか一項に記載の乳幼児用調合乳。
- 前記グリセリドを前記1つ以上のトコフェロール及びパルミチン酸アスコルビルと組み合わせることを含む、請求項1〜8のいずれか一項に記載の組成物を調製する方法。
- 2位にパルミトイル基を有するグリセリドを含むグリセリド組成物の安定性を改善するための、1つ以上のトコフェロール及びパルミチン酸アスコルビルを含む混合物の使用法であって、前記組成物の全パルミチン酸含有量の少なくとも30重量%がグリセリド中の2位に存在し、前記組成物及び混合物は追加のレシチンを含まず、任意に、前記混合物は前記組成物中に約1重量%までの量で存在する、使用法。
- 1つ以上のトコフェロール、植物油及びパルミチン酸アスコルビルを含み、かつレシチンを含まない、混合物。
