Abstract
Description
本願は、先願である2013年5月23日に出願された米国仮出願番号61/826,775に基づき、そしてこの米国仮出願に対する優先権を主張する。この米国仮出願の開示は、本明細書中に参考として援用される。
微生物(特に、ヒト病原体)を減少させるために、丸ごとのものと切ったものとの両方の新鮮(fresh)果実および新鮮野菜(まとめて、「生産物」)を処理するための、新規な抗微生物(antimicrobial)洗浄液は、過酸化水素と、1種類または1種類より多くの果実酸(fruit acid)との水溶液を含有する。この文脈において、「溶液」は、真の溶液、すなわち、水以外の全ての示される成分がその水相に溶解している組成物を意味すると理解される。従って、「溶液」は、示される成分が飽和濃度より多く存在することにより、この成分のうちの少なくともいくらかが分散固体として存在している、分散物を除外する。
使用形態にあるとき、すなわち、生産物に適用されるときの、本発明の抗微生物洗浄液中の成分の濃度は、以下の表1および表2に記載されている:
ベイスピナッチ(bay spinach)の葉を、1群あたり8gの重量の複数の群に分け、その後、各群を、表面を衛生化した試験管ラックの上部に層流フード下で置いた。次いで、各スピナッチの葉をUV光に5分間曝露して、その表面微生物の濃度を低下させた。5分後、トングまたはエタノールで衛生化したニトリルグローブを使用して、各葉を注意深く裏返し、次いで葉の逆の面を、UV光にさらに5分間曝露した。
次いで、各サンプルから得られた計数を、接種した葉を最初に抗微生物処理溶液と接触させずにDE中和ブロスに直接加えたポジティブコントロールと比較した。
4つの異なる水性抗微生物洗浄溶液を試験した。これらの組成を、以下の表3に示す:
この実施例において、BS EN 1276の一般方法を使用して、本発明の7つのさらなる水性抗微生物洗浄組成物の、新鮮果実および新鮮野菜を処理するために使用される洗浄水の微生物汚染を減少させることに関する有効性を評価した。これらの7つのさらなる水性抗微生物洗浄組成物の構成は一般に、上記実施例1および2の構成と同じであったが、これらの組成物中の活性成分の全濃度を、最高濃度(実施例3)から最低濃度(実施例9)まで変化させた。この試験において使用した微生物は、E.coli O157であり、干渉物質は、ウシアルブミンであり、そして接触時間は、5分間であった。
Claims (17)
- 新鮮果実および新鮮野菜を処理するための抗微生物洗浄液であって、過酸化水素と1種類または1種類より多くの果実酸との水溶液を含有する、抗微生物洗浄液。
- 前記果実酸は、リンゴ酸、クエン酸、酒石酸およびマンデル酸のうちの1種類または1種類より多くである、請求項1に記載の抗微生物洗浄液。
