Abstract
Description
本出願は、2013年6月19日に出願された米国仮出願第61/837,097号の利益を主張し、その開示内容は全体が参照により本明細書中に組み込まれる。
本発明は、レバウジオシドEを含有する食品および飲料などの経口的に消費可能な製品に関する。
本明細書中で使用される用語「経口的に消費可能な製品」は、人間または動物の口と接触する食用物質(口に入れられてその後口から吐き出される物質、また飲まれ、食べられ、飲み込まれあるいは摂取される物質を含む)であって、一般的に許容可能な濃度範囲で使用される場合にはヒトまたは動物の消費に安全な物質を意味する。
本開示の特定の態様は、レバウジオシドEおよびレバウジオシドEを含有する経口的に消費可能な製品に関する。
本開示の他の態様は、レバウジオシドEを含有する経口的に消費可能な製品に関する。一部の実施形態において、レバウジオシドEは、経口的に消費可能な製品の甘味を甘くしおよび/または増強する。
特定の実施形態において、約5ppm〜約100ppmのレバウジオシドEが、食品組成物中に存在する。本明細書中で使用される「食品組成物」は、栄養値を有し得る(しかし栄養価を有していなくてもよい)、さらに人間または動物による消費が意図される、任意の固体または液体の摂取可能材料を指す。
特定の実施形態において、約5ppm〜約100ppmのレバウジオシドEが飲料製品中に存在する。本開示の飲料製品は、炭酸飲料製品と非炭酸飲料製品の両方を含む。好適な飲料製品の例としては、限定するものではないが、例えば、ソフトドリンク、ファウンテン飲料、冷凍飲料、レディ・トゥ・ドリンク飲料、コーヒー、茶、乳飲料、粉末ソフトドリンク、液体濃縮物、フレーバードウォーター、機能性強化水、フルーツジュース、果汁入り飲料、スポーツドリンク、エネルギードリンク、およびアルコール飲料(例えば、ビール、ワイン、および酒)が挙げられる。
特定の実施形態において、約5ppm〜約100ppmのレバウジオシドEが栄養補助食品中に存在する。本明細書中で使用される「栄養補助食品」は、食事を補完し、さらに食事において不足する可能性があるかまたは十分な量で消費することができない栄養(例えば、ビタミン、ミネラル、食物繊維、脂肪酸、アミノ酸等)を提供することを目的とする化合物を指す。当技術分野で公知の任意の好適な栄養補助食品を使用することができる。好適な栄養補助食品の例としては、限定するものではないが、例えば、栄養素、ビタミン、ミネラル、食物繊維、脂肪酸、ハーブ、植物、アミノ酸および代謝産物が挙げられる。
特定の実施形態において、約5ppm〜約100ppmのレバウジオシドEがゲルミックスおよびゲル組成物中に存在する。本明細書中で使用される「ゲル」は、コロイド系であって、その中で粒子のネットワークが液体媒体の体積にわたるものを指す。ゲルは主に液体で構成され、このため液体と同様の密度を示すが、ゲルは、液体媒体にわたる粒子のネットワークに起因して、固体の構造的コヒーレンスを有する。この理由により、ゲルは、一般的に固体のゼリー様物質であると考えられる。ゲルは、多数の用途に使用することができる。例えば、ゲルは、食品、塗料、および粘着剤において使用することができる。食べられるゲルは「食用ゲル組成物」と呼ばれる。食用ゲル組成物は、典型的には、スナックとして、デザートとして、主食の一部として、または主食と共に食べられる。好適な食用ゲル組成物の例としては、限定するものではないが、例えば、ゲルデザート、プリン、ジャム、ゼリー、ペースト、トライフル、アスピック、マシュマロ、グミなどが挙げられる。一部の実施形態において、食用ゲルミックスは、一般的に、流体を添加して食用ゲル組成物を形成することができる粉末または粒状の固体である。好適な流体の例としては、限定するものではないが、水、乳製品流体、乳製品類似流体、ジュース、アルコール、アルコール飲料、およびそれらの組み合わせが挙げられる。好適な乳製品流体の例としては、限定するものではないが、牛乳、発酵乳、クリーム、流体乳清、ならびにそれらの混合物が挙げられる。好適な乳製品類似流体の例としては、限定するものではないが、豆乳および非乳製品コーヒー用クリームが挙げられる。
特定の実施形態において、約5ppm〜約100ppmのレバウジオシドEが医薬組成物中に存在する。当技術分野で公知の任意の好適な医薬組成物を使用することができる。特定の実施形態において、本開示の医薬組成物は、約5ppm〜約100ppmのレバウジオシドE、および1種以上の製薬上許容可能な賦形剤を含有する。一部の実施形態において、本開示の医薬組成物は、生物学的効果を発揮する1種以上の活性剤を含有する調合薬を製剤するために使用することができる。従って、一部の実施形態において、本開示の医薬組成物は、生物学的効果を発揮する1種以上の活性剤を含有し得る。好適な活性剤は、当技術分野で周知である(例えば、The Physician's Desk Reference)。このような組成物は、当技術分野で周知の手順に従って、例えば、Remington's Pharmaceutical Sciences, Mack Publishing Co., Easton, PA., USAに記載されるとおりに調製することができる。
特定の実施形態において、約5ppm〜約100ppmのレバウジオシドEが、歯科用組成物および口腔衛生組成物中に存在する。当技術分野で公知の任意の好適な歯科用組成物および口腔衛生組成物を使用することができる。好適な歯科用組成物および口腔衛生組成物の例としては、限定するものではないが、歯磨き粉、トゥースポリッシュ、デンタルフロス、マウスウォッシュ、マウスリンス、水歯磨き(dentrifice)、マウススプレー、マウスリフレッシャー、プラークリンス、歯痛軽減剤(dental pain reliever)などが挙げられる。
本開示の他の態様は、レバウジオシドEを含有する本開示の経口的に消費可能な製品の製造方法および/または甘味を増強する方法に関する。本開示の方法によって製造することができる好適な経口的に消費可能な製品の例としては、限定するものではないが、本明細書中に開示される食品組成物、飲料製品、栄養補助食品、機能性食品、食用ゲルミックス、食用ゲル組成物、医薬組成物、歯科用組成物、および口腔衛生組成物のいずれかが挙げられる。一部の実施形態において、レバウジオシドEは、経口的に消費可能な製品に直接含まれおよび/または添加されるか、あるいはそこから経口的に消費可能な製品が作製される化合物もしくは成分に含まれおよび/または添加される。他の実施形態において、経口的に消費可能な製品に含まれおよび/または添加されるレバウジオシドEは、レバウジオシドE多形、非晶質レバウジオシドE、またはレバウジオシドE立体異性体である。
以下の実施例は、レバウジオシドE(Reb E)が、砂糖と同等の甘味を有する濃度を示す。
砂糖(スクロース)の甘味を模倣するようにレバウジオシドE(Reb-E)を製造した。
Claims (28)
- 約5ppm〜約100ppmで存在するレバウジオシドEを含む、経口的に消費可能な製品。
- 経口的に消費可能な製品が、食品組成物、飲料製品、栄養補助食品、機能性食品、食用ゲルミックス、食用ゲル組成物、医薬組成物、歯科用組成物、および口腔衛生組成物からなる群から選択される、請求項1に記載の製品。
- 経口的に消費可能な製品が、菓子組成物、調味料、チューインガム、シリアル組成物、ベイクド製品、乳製品、および卓上甘味料組成物からなる群から選択される食品組成物である、請求項1に記載の製品。
- 製品が、炭酸飲料製品または非炭酸飲料製品である、請求項1に記載の製品。
- 製品が、ソフトドリンク、ファウンテン飲料、冷凍レディ・トゥ・ドリンク飲料、コーヒー、茶、乳飲料、粉末ソフトドリンク、液体濃縮物、フレーバードウォーター、機能性強化水、フルーツジュース、果汁入り飲料、スポーツドリンク、およびエネルギードリンクからなる群から選択される飲料製品である、請求項1に記載の製品。
- レバウジオシドEが唯一の甘味料であり、製品が約1%〜約4%(w/v%)スクロース溶液と同等の甘味強度を有する、請求項1〜5のいずれか1項に記載の製品。
- 追加の甘味料をさらに含み、製品が約1%〜約10%(w/v%)スクロース溶液と同等の甘味強度を有する、請求項1〜5のいずれか1項に記載の製品。
- 製品中の全ての甘味成分が高強度甘味料である、請求項7に記載の製品。
- 製品中の全ての甘味成分が天然の高強度甘味料である、請求項7に記載の製品。
- 追加の甘味料が、ステビア抽出物、ステビオール配糖体、ステビオシド、レバウジオシドA、レバウジオシドB、レバウジオシドC、レバウジオシドD、レバウジオシドF、デュルコシドA、ルブソシド、ステビオールビオシド、スクロース、高フルクトースコーンシロップ、フルクトース、グルコース、キシロース、アラビノース、ラムノース、エリスリトール、キシリトール、マンニトール、ソルビトール、イノシトール、アセスルファムK(AceK)、アスパルテーム、ネオテーム、スクラロース、サッカリン、ナリンジンジヒドロカルコン(NarDHC)、ネオヘスペリジンジヒドロカルコン(NDHC)、ルブソシド、モグロシドIV、シアメノシドI、モグロシドV、モナチン、ソーマチン、モネリン、ブラゼイン、L-アラニン、グリシン、羅漢果、ヘルナンズルチン、フィロズルチン、トリロブテイン、およびそれらの組み合わせからなる群から選択される1種以上の甘味料を含む、請求項7に記載の製品。
- 炭水化物、ポリオール、アミノ酸またはその塩、ポリアミノ酸またはその塩、糖酸またはその塩、ヌクレオチド、有機酸、無機酸、有機塩、有機酸塩、有機塩基塩、無機塩、苦味化合物、香味料、香味成分、収斂化合物、タンパク質、タンパク質加水分解物、界面活性剤、乳化剤、フラボノイド、アルコール、ポリマー、およびそれらの組み合わせからなる群から選択される1種以上の添加剤をさらに含む、請求項1〜10のいずれか1項に記載の製品。

- 製品中のレバウジオシドEが、レバウジオシドE多形または非晶質レバウジオシドEである、請求項1〜12のいずれか1項に記載の製品。
- 製品中のレバウジオシドEが、レバウジオシドE立体異性体である、請求項1〜12のいずれか1項に記載の製品。
- 経口的に消費可能な製品の製造方法であって、精製レバウジオシドEを該製品または該製品を作製するための成分に含めるステップを含み、レバウジオシドEは、製品中に約5ppm〜約100ppmの濃度で存在する、上記方法。
- 経口的に消費可能な製品の甘味を増強する方法であって、約5ppm〜約100ppmの精製レバウジオシドEを、経口的に消費可能な製品または経口的に消費可能な製品を作製するための成分に添加するステップを含み、添加されたレバウジオシドEは、経口的に消費可能な製品の甘味を、対応する精製レバウジオシドEを含まない経口的に消費可能な製品と比較して増強する、上記方法。
- レバウジオシドEが唯一の甘味料であり、製品が約1%〜約4%(w/v%)スクロース溶液と同等の甘味強度を有する、請求項15または16に記載の方法。
- 追加の甘味料を添加するステップをさらに含み、製品が約1%〜約10%(w/v%)スクロース溶液と同等の甘味強度を有する、請求項15または請求項16に記載の方法。
- 甘味付けされた経口的に消費可能な製品の製造方法であって、以下のステップ:
a) 1種以上の甘味料を含む経口的に消費可能な製品を提供するステップ;および
b) 約5ppm〜約100ppmの精製レバウジオシドEを経口的に消費可能な製品に添加するステップ
