Abstract
Description
この出願は2014年3月27日に出願された米国仮特許出願第61/970,977号の優先権を主張し、その内容は、そのまま記載されているように、参照することにより本明細書に組み込まれる。
本発明は、甘味増強用のナリンゲニン及びその塩に関する。
坑酸化活性を示すことが知られている天然産物質であるナリンゲニン(Heo ら (2004) J. Agricul. Food Chem. 52(6):1520-1525)それ自体は、比較的口当りのよい味を有し、ほんの弱い味から甘くない味までを示す。ナリンゲニンはヘルスケアにおける医薬物質として主に使用されていた(米国特許第4,297,348 号、同第6,096,364 号及び同第8,846,351 号を参照のこと)。食品工業におけるその可能な使用が長く研究されていたが、議論の的になったままである。早期の報告は苦味又は望ましくない風味の認知を低下する後味改質剤としてそれを開示している(例えば、米国特許公開第2009/0004360 号を参照のこと)。しかしながら、更に最近かつ更に詳細な研究は10ppmまでの濃度で試験されたナリンゲニンが、苦味及び不快な後味を示し、風味について不十分に機能することを示している(米国特許公開第2014/0170082 号を参照のこと)。この度、意外なことに、約50ppmから約1000ppmまでの範囲の濃度で使用した場合、ナリンゲニンが望ましくないオフノートを生じないで甘味改質剤の甘味を増強することがわかった。従って、本発明はナリンゲニン又はその塩を特別なレベルで使用して甘味改質剤の甘味を増強し、消耗品に使用される甘味改質剤の量を減少する方法を提供する。
本発明が下記の非限定的実施例により大いに詳しく記載される。材料は、特に断らない限り、アルドリッチ・ケミカル社から購入した。
異なる濃度の蔗糖溶液を水中で調製した。ナリンゲニン(AuNutra Industries Inc社)溶液をまた水中で調製し(100ppm)、下記の全ての実施例で使用した。
夫々の試験グループは26対のサンプルを含んでいた。夫々の対のサンプルにおいて、高濃度の蔗糖溶液を、低濃度ではあるがナリンゲニンと組み合わせたものに対して、甘味について比較した。結果を、対の比較においてより甘いと評価されたサンプルの数によって表し、次いでこれらを95%の信頼レベルで両側比較のための二項分布を使用して統計分析した。評価を下記の表に報告する。
異なる濃度のReb A溶液を水中で調製し、ナリンゲニンによる甘味増強を同様に評価した。
ナリンゲニンによる蔗糖及びReb Aの組み合わせの甘味増強をまた評価した。
加えて、ナリンゲニンによる(i)スクラロース(40 ppm)、(ii)アスパルテーム(120ppm)及び(iii)アセスルファームカリウム(120ppm)の甘味増強をまた夫々評価した。全ての試験グループで、ナリンゲニンは、最初にインパクトのある甘味(sweetness with an impact up front)を増強した。
5%の蔗糖を含むダノン無脂肪プレーンヨーグルトを調製し、ベースとして使用した。異なる量のナリンゲニンをそのベースに添加して10ppm から1000ppmまでの範囲の一連の濃度のナリンゲニンサンプルを得た。
Reb A水溶液(10 ppm)を調製し、ベースとして使用した。異なる量のナリンゲニンをそのベースに添加して10ppm から1000ppmまでの範囲の一連の濃度のナリンゲニンサンプルを得た。
Claims (20)
- 嗅覚有効量のナリンゲニン、その塩又はこれらの組み合わせを添加する工程を含むことを特徴とする、甘味改質剤の甘味を増強する方法。
- 前記甘味改質剤が、甘味料である、請求項1記載の方法。
- 前記甘味料が、蔗糖、フルクトース、グルコース、高フルクトースコーンシロップ、レバウジオシドA、ステビオシド、レバウジオシドD、キシロース、アラビノース、ラムノース、エリスリトール、キシリトール、マンニトール、ソルビトール、イノシトール及びこれらの組み合わせからなる群から選択される天然甘味料である、請求項2記載の方法。
- 前記甘味料が、アスパルテーム、スクラロース、ネオテーム、アセスルファームカリウム、サッカリン及びこれらの組み合わせからなる群から選択される人工甘味料である、請求項2記載の方法。
- 前記甘味改質剤が、ステビオシド、ステビオールビオシド、レバウジオシドA、レバウジオシドB、レバウジオシドC、レバウジオシドD、レバウジオシドE、レバウジオシドF、ズルコシドA、ズルコシドB、ルブソシド、アルファ−グルコシルステビア、フルクトシルステビア、ガラクトシルステビア、ベータ−グルコシルステビア、シアメノシド、モグロシドIV、モグロシドV、ラカンカ、モナチン、グリシルリジン酸、タウマチン、これらの塩、これらのグリコシル化誘導体及びこれらの組み合わせからなる群から選択される、改質特性を有する風味料である、請求項2記載の方法。
- 前記改質特性を有する風味料が、レバウジオシドA、レバウジオシドC、ルブソシド、レバウジオシドD、モグロシドV、ラカンカ、グリシルリジン酸、これらの塩、これらのグリコシル化誘導体及びこれらの組み合わせからなる群から選択される、請求項5記載の方法。
- 前記嗅覚有効量が、約50ppmから約1000ppmまでである、請求項1記載の方法。
- 前記嗅覚有効量が、約75ppmから約750ppmまでである、請求項1記載の方法。
- 前記嗅覚有効量が、約100ppmから約500ppmまでである、請求項1記載の方法。
- 甘味改質剤と嗅覚有効量のナリンゲニンとの組み合わせ。
- 前記甘味改質剤が、甘味料である、請求項10記載の組み合わせ。
- 前記甘味料が、蔗糖、フルクトース、グルコース、高フルクトースコーンシロップ、レバウジオシドA、ステビオシド、レバウジオシドD、キシロース、アラビノース、ラムノース、エリスリトール、キシリトール、マンニトール、ソルビトール、イノシトール及びこれらの組み合わせからなる群から選択される天然甘味料である、請求項11記載の組み合わせ。
- 前記甘味料が、アスパルテーム、スクラロース、ネオテーム、アセスルファームカリウム、サッカリン及びこれらの組み合わせからなる群から選択される人工甘味料である、請求項11記載の組み合わせ。
- 前記甘味改質剤が、ステビオシド、ステビオールビオシド、レバウジオシドA、レバウジオシドB、レバウジオシドC、レバウジオシドD、レバウジオシドE、レバウジオシドF、ズルコシドA、ズルコシドB、ルブソシド、アルファ−グルコシルステビア、フルクトシルステビア、ガラクトシルステビア、ベータ−グルコシルステビア、シアメノシド、モグロシドIV、モグロシドV、ラカンカ、モナチン、グリシルリジン酸、タウマチン、これらの塩、これらのグリコシル化誘導体及びこれらの組み合わせからなる群から選択される、改質特性を有する風味料である、請求項10記載の組み合わせ。
- 前記改質特性を有する風味料が、レバウジオシドA、レバウジオシドC、ルブソシド、レバウジオシドD、モグロシドV、ラカンカ、グリシルリジン酸、これらの塩、これらのグリコシル化誘導体及びこれらの組み合わせからなる群から選択される、請求項14記載の組み合わせ。
- 前記嗅覚有効量が、約50ppmから約1000ppmまでである、請求項10記載の組み合わせ。
- 前記嗅覚有効量が、約75ppmから約750ppmまでである、請求項10記載の組み合わせ。
- 前記嗅覚有効量が、約100ppmから約500ppmまでである、請求項10記載の組み合わせ。
- 甘味改質剤と嗅覚有効量のナリンゲニンとの組み合わせを含むことを特徴とする消耗品。
- 前記甘味改質剤が、レバウジオシドA、レバウジオシドC、ルブソシド、レバウジオシドD、モグロシドV、ラカンカ、グリシルリジン酸、これらの塩、これらのグリコシル化誘導体及びこれらの組み合わせからなる群から選択される、改質特性を有する風味料であり、かつ前記嗅覚有効量が、約50ppmから約1000ppmまでである、請求項19記載の消耗品。
