Claims (27)
- 飲料中のタンパク質を変性する方法において、
タンパク質を含む飲料内容物を混合して、飲料を形成する工程、
熱交換器内で前記飲料を加熱する工程、
前記飲料を前記熱交換器の外部にある保持ループに移動させる工程、および
前記飲料が前記熱交換器内で加熱された後に、該熱交換器の詰まりを防ぐために該熱交換器の外部で変性が行われるように、ある滞留時間に亘り前記保持ループ内で前記タンパク質を変性する工程、
を有してなる方法。 - 前記保持ループがステンレス鋼製管である、請求項1記載の方法。
- 前記保持ループ中の滞留時間が30から180秒間の範囲にある、請求項1記載の方法。
- 前記飲料が前記保持ループに移動される前に、該飲料が、180°Fから210°F(約82℃から99℃)の範囲に前記熱交換器内で加熱される、請求項1記載の方法。
- 前記飲料が、3%から8%のホエータンパク質を含む果汁スムージーを含む、請求項1記載の方法。
- 前記保持ループが、他の飲料の処理中に迂回されるように構成されている、請求項1記載の方法。
- 前記飲料を前記熱交換器および前記保持ループに送るように、取り外し可能な管を含むスイングパネルが構成されている、請求項1記載の方法。
- 前記保持ループ内の前記飲料に追加の加熱が行われない、請求項1記載の方法。
- 前記飲料が第2の保持ループおよび第3の保持ループに通過させられる、請求項1記載の方法。
- 前記飲料がホモジナイザに通過させられる、請求項1記載の方法。
- 飲料中のタンパク質を変性するためのシステムにおいて、
飲料形成タンク、
前記飲料を加熱するための熱交換器、および
前記飲料中のタンパク質を変性するためにある滞留時間に亘り該飲料を保持するように構成された、前記熱交換器とは別個の第1の保持ループ、
を備えたシステム。 - 前記保持ループがステンレス鋼製管を含む、請求項11記載のシステム。
- 第2の保持ループおよび第3の保持ループをさらに含む、請求項11記載のシステム。
- ホモジナイザをさらに含む、請求項11記載のシステム。
- 前記保持ループが、他の飲料製品の処理中に迂回されるように構成されている、請求項11記載のシステム。
- 前記飲料を前記熱交換器および前記保持ループに送るように構成された、取り外し可能な管を含むスイングパネルをさらに含む、請求項11記載のシステム。
- 前記第1の保持ループにおいて追加の加熱が行われないように構成されている、請求項11記載のシステム。
- 飲料混合物中のタンパク質を変性する方法において、
タンパク質を含む飲料混合物を形成する工程、
前記飲料混合物を加熱する工程、
前記飲料混合物を加熱した後、該飲料混合物を保持ループに移動させる工程、および
前記飲料混合物が加熱された後に、ある滞留時間に亘り前記保持ループ内で前記タンパク質を変性する工程、
を有してなる方法。 - 前記保持ループがステンレス鋼製管である、請求項18記載の方法。
- 前記保持ループ中の滞留時間が30から180秒間の範囲にある、請求項18記載の方法。
- 前記飲料混合物が前記保持ループに移動される前に、該飲料混合物が、180°Fから210°F(約82℃から99℃)の範囲に加熱される、請求項18記載の方法。
- 前記飲料混合物が、3%から8%のホエータンパク質を含む果汁スムージーを含む、請求項18記載の方法。
