Abstract
Description

本発明は、粒状フレーバー送達系に関する。粒状フレーバー送達系は、デンプン担体、好ましくは固体デンプン担体と、第一風味剤及び可塑剤のブレンドとを含み、前記ブレンドは前記デンプン担体に封入されている。本明細書で使用されるとき、用語「封入されている」は、ブレンドがデンプン担体の内部構造の内部に吸着していること又は閉じ込められていることを意味する。粒状フレーバー送達系は、好ましくは実質的に乾燥している。より好ましくは、例えば取扱いを改善する易流動性粉末として挙動することができるような乾燥粒状フレーバー送達系である。
デンプンは、大部分の植物細胞において顆粒の形態で生成される多糖である。そのようなデンプン顆粒は、高度に整列された結晶領域及び組織化が不十分な非晶質領域からなる。この顆粒状態で存在する場合、デンプンは「天然デンプン」と呼ばれる。
本発明の第一風味剤は、室温、すなわち20℃〜25℃の温度で非液体である風味剤である。そのような風味剤の例には、バニラフレーバー(バニリン、CAS121−33−5)、ラズベリーフレーバー(ラズベリーケトン、CAS5471−51−2)、ストロベリーフレーバー(ストロベリーフラノン、CAS3658−77−3)、焼き砂糖(cooked sugar)フレーバー(マルトール、CAS118−71−8)、チーズ又はジャスミンフレーバー(インドール、CAS120−72−9)及びナッツフレーバー(メチルシクロペンテノロン、CAS80−71−7)が含まれるが、これらに限定されない。他の適切な風味剤は、強力甘味料、ジペプチド甘味料(例えば、アスパルテーム、アセスルファム(acesulfame)塩、シクラメート、ステビオシド)、スクラロース、サッカリン又はサッカリン塩、天然甘味料(例えば、糖、グルコース、フルクトース)、ポリオール(例えば、マルチトール、ソルビトール、ラクチトール、キシリトール、エリトリトール、イソマルト及びマンニトール)又はこれらの組み合わせが含まれるが、これらに限定されない甘味料である。
本発明の可塑剤は、室温、すなわち20℃〜25℃の温度で液体である可塑剤である。可塑剤は、デンプン担体を溶解しないように選択されるべきである。適切な可塑剤の例には、モノ−、ジ−及びトリグリセリド、油(例えば、オメガ3、ヒマワリ油)及び油抽出物(例えば、アニス油、ハッカ油、チョウジ油、カンキツ油)、天然硬化油脂、水、グリセロール、エタノール、ジアセチン、トリアセチン、プロピレングリコール、イソプロピルアルコール、トリエチルシトレート、ベンジルアルコール、ソルビタンエステル、ミグリオール又はこれらの組み合わせが含まれるが、これらに限定されない。
本発明の制御送達系は、第一風味剤と可塑剤のブレンドを含む。好ましくは、第一風味剤と可塑剤の比は、20:1〜3:1、より好ましくは20:1〜4:1、さらにより好ましくは20:1〜5:1である。
更なる態様によると、本発明は、粒状フレーバー送達系を作製する方法であって、以下の工程」
a.20℃〜25℃で非液体である第一風味剤を可塑剤と25℃〜65℃の温度で混合することによりブレンドを作製する工程;及び
b.前記ブレンドをデンプン担体と混合する工程
を含む方法に関する。
本発明の粒状フレーバー送達系を、限定はされないが、食品及び食料品、飼料、チューインガム、パーソナルケア製品、医薬品又は錠剤のような多くの分野において使用することができる。
試料の調製:最初に本発明のフレーバー送達系の試料を、測定の前に室温条件で3日間平衡させる。次に約10mgの試料を、高圧ステンレススチールるつぼに入れて、経時的な蒸発を避ける。
− −80℃で停止させる
− 恒温で3分間
− 1分間に5℃で80℃まで加熱する
フレーバーブレンドの融解プロフィールを分析して、総エンタルピー(ジュール/gブレンド)が得られる。2つの画分が注目され、25℃以下で融解するもの(液体部分と呼ばれる)と25℃超で融解するもの(固体部分と呼ばれる)であり得る。液体部分と固体部分の部分的な一体化によって、それぞれのエンタルピーを計算することができる。これらのエンタルピーから、両方の部分の重量比を計算することができる。
本発明の粒状フレーバー送達系は、第一風味剤としてメントール及び可塑剤としてハッカ油を使用して調製する。成分及びそれらレベルを表1に提示する。
比較研究を、上記に記載されたフレーバー送達系対同じ量のメントールを含有する噴霧乾燥送達系からの、咀嚼後のメントールの風味放出について実施する。GC/MSは、噴霧乾燥系において1分後にメントールのより高い即時放出を示す。5分後、わずか74%のメントールがチューインガムにおいて依然として存在し、それに対して本発明のフレーバー送達系では85%である。8分後、百分率はそれぞれ68%対75%である。9分後、値はそれぞれ60%対67.5%である。
Claims (15)
- デンプン担体と、第一の風味剤(flavouring agent)及び可塑剤のブレンドとを含み、前記第一風味剤が20℃〜25℃の温度で非液体であり、前記可塑剤が20℃〜25℃の温度で液体であり、前記ブレンドが前記デンプン担体に封入されている粒状フレーバー送達系であって、前記封入されたブレンドが、前記ブレンドの少なくとも40重量%の固体又は半固体である部分を含み、前記固体又は半固体部分が25℃〜250℃の融点又はガラス転移温度を有することを特徴とする、粒状フレーバー送達系。
- 前記固体又は半固体部分が、25℃〜65℃の融点又はガラス転移温度を有する、請求項1に記載の粒状フレーバー送達系。
- 前記封入されたブレンドが、前記ブレンドの40重量%未満の、20℃以下の凝固点を有する液体部分を含む、請求項1又は2に記載の粒状フレーバー送達系。
- 固体又は半固体部分と前記液体分との比が1よりも高く、好ましくは前記比が20:1〜3:1である、請求項1〜3のいずれか一つに記載の粒状フレーバー送達系。
- 前記第一風味剤が、前記デンプン担体の10重量%〜40重量%のレベルで存在する、請求項1〜4のいずれか一つに記載の粒状フレーバー送達系。
- 前記可塑剤が、20℃〜25℃の温度で液体である第二の風味剤を含む、請求項1〜5のいずれか一つに記載の粒状フレーバー送達系。
- 前記第二風味剤が精油を含む、請求項6に記載の粒状フレーバー送達系。
- 前記デンプン担体が、0.5マイクロメートル〜400マイクロメートルの平均粒径を有する、請求項1〜7のいずれか一つに記載の粒状フレーバー送達系。
- 前記デンプン担体が多孔質デンプンである、請求項1〜8のいずれか一つに記載の粒状フレーバー送達系。
- 粒状フレーバー送達系を製造する方法であって、以下の工程:
a.20℃〜25℃で非液体である第一風味剤を可塑剤と25℃〜65℃の温度で混合することによりブレンドを製造する工程;及び
b.前記ブレンドをデンプン担体と混合する工程、
を含む方法。 - ベーカリー製品を含む食品及び食料品、飼料、チューインガム、パーソナルケア製品、医薬品又は錠剤における、請求項1〜9のいずれか一つに記載の粒状フレーバー送達系の使用。
- 請求項1〜9に記載の粒状フレーバー送達系を含むチューインガムであって、前記第一風味剤がメントールを含み、前記可塑剤がハッカ油を含む、チューインガム。
- 前記粒状フレーバー送達系が、前記チューインガムの0.5重量%〜5重量%のレベルで存在する、請求項12に記載のチューインガム。
- 請求項1〜9に記載の粒状フレーバー送達系を含むベーカリー製品であって、前記粒状フレーバー送達系が、前記ベーカリー製品の0.05重量%〜5重量%のレベルで存在する、ベーカリー製品。
- 請求項1〜9に記載の粒状フレーバー送達系を含む錠剤であって、前記粒状フレーバー送達系が、前記錠剤の0.5重量%〜5重量%のレベルで存在し、前記錠剤が場合により発泡剤を含む、錠剤。
