Description
・プロピオネート、アセテート、及びカーボネート関連化合物を含む発酵産物を用意する工程、及び
・該発酵産物に酸を添加して、2.5〜8未満の範囲のpHを有する酸性化発酵産物を得る工程(本明細書以下において酸性化工程とも呼ばれる)
を含む。
プロピオネート及びアセテートを含む発酵ブロスが製造された。バイオマスが、限外ろ過により除去された。透明な限外ろ過透過物が、85mbar且つ60℃でのエバポレーションの間に、10倍に、約20重量%のプロピオオネートの濃度へと濃縮された。固形物がすぐに底へと沈殿し、そして、二酸化炭素ガスの放出により、pHが約7から約10.5へと増加した。
実施例1で製造された発酵ブロスが、今、最初に、乳酸の添加により、約3〜3.5のpHへと酸性化された。該より低いpHが、発泡する二酸化炭素ガスを結果した。該発泡が停止した後、該酸性化発酵ブロスのpHが、水酸化カリウムの添加により、約6.5〜7のpHへと戻された。得られた発酵産物が、3倍濃縮された。沈殿もいずれのガス形成も起こらなかった。
その後、pHが、乳酸/水酸化ナトリウムバッファーの添加により5.7にセットされ、そして、産物が、6月間貯蔵された。これらの6月の間、固形物は沈殿しなかった。
水酸化カリウムの代わりに、塩基として水酸化ナトリウムが添加されたこと以外は、実施例2が繰り返された。エバポレーションの間又はその後の貯蔵の間に、沈殿もいずれのガス形成も起こらなかった。
Claims (15)
- プロピオネート及びアセテートを含む混合溶液の製造方法であって、
プロピオネート、アセテート、及びカーボネート関連化合物を含む発酵産物を用意する工程、
該発酵産物に酸を添加して、2.5〜8未満のpHを有する、プロピオネート及びアセテートを含有する酸性化発酵産物を得る工程、
を含む前記方法。 - 該方法が、カーボネート関連化合物を除去する工程を含む、請求項1に記載の方法。
- 2.5〜5のpHを有する酸性化発酵産物が得られ、そして、塩基が該酸性化発酵産物に添加されて、少なくとも5のpHを有する中和された発酵産物を得る、請求項1又は2に記載の方法。
- 該発酵産物が、該酸の添加の前に又は該酸の添加と同時に、及び/又は、該塩基の添加の前に又は該塩基の添加と同時に、及び/又は、該塩基の添加の後に、加熱工程に付される、請求項1〜3のいずれか1項に記載の方法。
- 該発酵産物が、該酸を添加する前に、及び/又は、該塩基を添加する前に、及び/又は該塩基の添加の後に、濃厚化工程に付される、請求項1〜4のいずれか1項に記載の方法。
- プロピオネート、アセテート、及びカーボネート関連化合物を含む該発酵産物が、水性培地中のラクテート及び/又は炭水化物を、バクテリアを用いた発酵工程に付し、次に該バクテリアの部分的な又は完全な除去が行われることにより用意される、請求項1〜5のいずれか1項に記載の方法。
- 該酸が添加されて、6〜7.5のpHが得られる、請求項1〜6のいずれか1項に記載の方法。
- 該添加された酸が乳酸を含む、請求項1〜7のいずれか1項に記載の方法。
- 該酸が、乳酸、酢酸、クエン酸、又はこれらの混合物から選ばれたものである、請求項1〜7のいずれか1項に記載の方法。

- 環境温度で最大で0.05mol/lのカーボネート関連化合物の合計量を有する、請求項11又は12の水性溶液。
- 食料、肉、又は飲料の製品において添加剤として又は味増強剤として、請求項11、12、又は13の溶液を使用する方法。
