Claims (8)

  1. 難消化性デンプン含有量が少なくとも70%(重量/重量)であるデンプンを含有するデンプン、およびハイドロコロイドを含む複合体であって、
    前記デンプンが、水熱処理されたデンプンであり;
    前記複合体が、熱及び/又は圧力を用いる押出しにより調製され;
    前記デンプンが、高アミローストウモロコシデンプンであり;
    前記ハイドロコロイドが、グアーガムであり;そして
    前記デンプン及びハイドロコロイドが、少なくとも70:30のデンプン:ハイドロコロイドの比(重量/重量)を有する;
    ことを特徴とする複合体
  2. さらにオイルを含む、請求項1に記載の複合体。
  3. 前記オイルが、前記複合体に対して10〜25%(重量/重量)の量で存在する、請求項に記載の複合体。
  4. 請求項1に記載の複合体、および追加の食用成分を含む食品。
  5. 前記複合体が、5〜75%(重量/重量)の量である、請求項に記載の食品。
  6. 前記デンプンが、2型何消化性デンプンとしても知られている粒状難消化性デンプンである、請求項1に記載の複合体。
  7. 前記複合体が、少なくとも80:20のデンプン:ハイドロコロイドの比(重量/重量)を有する請求項1に記載の複合体。
  8. 前記複合体が、85℃〜95℃の間の温度にこいて押出される、請求項1に記載の複合体。
