- 前記クリームは無水乳脂肪または全粉乳に形成される、請求項2に記載の方法。
- 前記クリームは、脱脂乳濃縮物と再び組み合わされて、全粉乳に形成される、請求項2に記載の方法。
- 前記乳組成物は、全乳または乳タンパク質濃縮物を含む、請求項1に記載の方法。
- 前記金属イオン封鎖剤は、リン酸塩、ピロリン酸塩、二リン酸塩、三リン酸塩、ポリリン酸塩、炭酸塩、アルドビオン酸およびクエン酸塩からなる群から選択される、請求項1に記載の方法。
- 前記金属イオン封鎖剤は、二リン酸二ナトリウム、二リン酸三ナトリウム、二リン酸四ナトリウム、二リン酸二カリウム、二リン酸四カリウム、二リン酸二マグネシウム、三リン酸五ナトリウム、三リン酸五カリウム、ポリリン酸ナトリウム、ポリリン酸カリウム、ポリリン酸アンモニウム、トリポリリン酸カリウム、リン酸二ナトリウム、リン酸二カリウム、クエン酸、ラクトビオン酸、リン酸、ピロリン酸四ナトリウム、メタリン酸ナトリウム、ヘキサメタリン酸ナトリウム、リン酸三カリウム、クエン酸三ナトリウム、リン酸三ナトリウム、クエン酸三カリウム、ピロリン酸二ナトリウム、エチイエンアミン四酢酸二ナトリウム(disodium ethyyeneaminetetraacetate)、グルコン酸ナトリウム、ラクトビオン酸ナトリウム、グルコン酸、またはトリポリリン酸ナトリウムカリウムを含む、請求項1に記載に記載の方法。
- 金属イオン封鎖剤は、ヘキサメタリン酸ナトリウム、トリポリリン酸カリウム、またはピロリン酸四ナトリウムを含む、請求項1に記載の方法。
- 処理済み乳を粉乳に形成する工程の前記形成は、
処理済み乳からの乳固形物を濃縮して乳濃縮物を形成する工程と、
前記乳濃縮物を噴霧乾燥させて粉乳を形成する工程とを含む、請求項1に記載の方法。 - 前記粉乳は均質なチーズ塊中に混合される、請求項1に記載の方法。
- 前記均質なチーズ塊は、前記均質なチーズ塊に同一量の未処理の脱脂粉乳粉末が加えられた場合よりも、より硬質で、より弾力があり、かつより凝集性があるチーズ製品に形成される、請求項11に記載の方法。
- 前記チーズ製品は細断されるか、またはさいの目に切られる、請求項12に記載の方法。
- 前記チーズ製品はピザチーズを含む、請求項13に記載の方法。
- 前記粉乳は、チーズ前駆体に加えられて混合物を形成するスラリーの一部にされる、請求項1に記載の方法。
- 前記混合物はチーズ製品に形成される、請求項15に記載の方法。
- 前記混合物は、前記混合物に同一量の未処理の脱脂粉乳粉末が加えられた場合よりも、より硬質で、より弾力があり、かつより凝集性があるチーズ製品に形成される、請求項16に記載の方法。
- 粉末乳組成物を製造する方法であって、前記方法は、
液体乳組成物に緩衝剤化合物を加えて、前記乳組成物に約5.5以上のpHを与える工程と、
前記乳組成物にオキシドレダクターゼ酵素を加える工程と、
前記乳組成物にカルシウムに対する金属イオン封鎖剤およびレンネットを加えて、処理済み乳を製造する工程と、
前記処理済み乳を粉乳に形成する工程とを含む、方法。 - 液体乳組成物は、液体乳組成物を脱脂乳とクリームとに分離することにより得られた脱脂乳を含む、請求項18に記載の方法。
- 前記方法は、前記乳組成物に酸素を加える工程をさらに含む、請求項18に記載の方法。
- 前記方法は、前記乳組成物にカタラーゼ酵素を加える工程をさらに含む、請求項18に記載の方法。
- 前記オキシドレダクターゼ酵素は、ヘキソースオキシダーゼ、グルコースオキシダーゼ、ガラクトースオキシダーゼ、ピラノースオキシダーゼ、セロビオースオキシダーゼ、炭水化物オキシダーゼおよびラクトースオキシダーゼからなる群から選択される、請求項18に記載の方法。
- 前記緩衝剤は、水酸化カルシウム、炭酸カルシウム、炭酸アンモニウム、アンモニア水、炭酸ナトリウム、水酸化カリウム、炭酸マグネシウム、水酸化マグネシウム、水酸化アンモニウムまたは水酸化ナトリウムを含む、請求項18に記載の方法。
- 前記金属イオン封鎖剤は、リン酸塩、ピロリン酸塩、ラクトビオン酸、二リン酸塩、三リン酸塩、ポリリン酸塩、炭酸塩、アルドビオン酸およびクエン酸塩からなる群から選択される、請求項18に記載の方法。
- 処理済み乳を粉乳に形成する工程の前記形成は、
前記処理済み乳からの乳固形物を濃縮して乳濃縮物を形成する工程と、
前記乳濃縮物を噴霧乾燥させて、粉乳を形成する工程とを含む、請求項18に記載の方法。 - チーズ製品を製造する方法であって、
チーズカ−ドを均質なチーズ塊に形成する工程と、
前記均質なチーズ塊に乳製品粉末を混合する工程と、
前記均質なチーズ塊を一定形状に形成する工程と、
前記均質なチーズ塊を冷却してチーズ製品を形成する工程とを含み、
前記乳製品粉末は、
液体乳組成物に金属イオン封鎖剤およびレンネットを加えて、処理済み乳を製造し、
前記処理済み乳を乾燥させて、乳製品粉末を形成することにより製造される、方法。 - 前記液体乳組成物は脱脂乳を含む、請求項26に記載の方法。
- 前記乳製品粉末は脱脂粉乳粉末を含む、請求項27に記載の方法。
- チーズ製品を製造する方法であって、
スラリーを提供する工程と、
前記スラリーに乳製品粉末を混合する工程と、
前記スラリーをチーズ前駆体と合わせて混合物を形成する工程と、
前記混合物を加工してチーズ製品を形成する工程とを含み、
前記乳製品粉末は、
液体乳組成物に金属イオン封鎖剤およびレンネットを加えて、処理済み乳を製造し、
その処理済み乳を乾燥させて、乳製品粉末を形成することにより製造される、方法。 - 前記液体乳組成物は脱脂乳を含む、請求項29に記載の方法。
- 前記乳製品粉末は脱脂粉乳粉末を含む、請求項29に記載の方法。
- チーズ製品を製造する方法であって、
スラリーを提供する工程と、
前記スラリーに乳製品粉末を混合する工程と、
前記スラリーをチーズ前駆体と合わせて混合物を形成する工程と、
前記混合物を加工してチーズ製品を形成する工程とを含み、
前記乳製品粉末は、
液体乳組成物に、緩衝剤、オキシドレダクターゼ酵素、金属イオン封鎖剤およびレンネットを加えて、処理済み乳を製造し、
その処理済み乳を乾燥させて乳製品粉末を形成することにより製造される、方法。 - 前記乳製品粉末は脱脂粉乳粉末を含む、請求項32に記載の方法。
- チーズ製品を製造する方法であって、
チーズを準備する工程と、
前記チーズと乳製品粉末とを混合して混合チーズを製造する工程であって、前記乳製品粉末は、液体乳組成物に金属イオン封鎖剤およびレンネットを加えて処理済み乳を製造し、その処理済み乳を乾燥させて乳製品粉末を形成することにより製造される工程と、
混合したチーズおよび乳製品粉末を均質なチーズ塊に形成する工程と、
前記均質なチーズ塊を一定形状に形成する工程と、
前記均質なチーズ塊を冷却してチーズ製品を形成する工程とを含む、方法。 - 前記液体乳組成物は脱脂乳を含む、請求項34に記載の方法。
- 前記乳製品粉末は脱脂粉乳粉末を含む、請求項34に記載の方法。
- チーズ製品を製造する方法であって、
チーズカ−ド中に乳製品粉末を混合する工程と、
前記チーズカ−ドを均質なチーズ塊に形成する工程と、
前記均質なチーズ塊を一定形状に形成する工程と、
前記均質なチーズ塊を冷却してチーズ製品を形成する工程とを含み、
前記乳製品粉末は、
液体乳組成物に金属イオン封鎖剤およびレンネットを加えて、処理済み乳を製造し、
その処理済み乳を乾燥させて乳製品粉末を形成することにより製造される、方法。 - キモシンによって酵素的に変性した1種以上の乳タンパク質であって、前記キモシンにより変性したタンパク質は凝固しないことと、
前記粉末製品中のカルシウムイオンと結合する金属イオン封鎖剤とを含む、粉末脱脂粉乳製品。 - 前記金属イオン封鎖剤は、前記キモシンにより変性したタンパク質が凝固するのを防止するのに十分な量で加えられる、請求項38に記載の粉末脱脂粉乳製品。
- 前記キモシンにより変性したタンパク質は、前記製品にイオン化カルシウム源を添加すると凝固する、請求項38に記載の粉末脱脂粉乳製品。
- 前記キモシンにより変性したタンパク質は、前記製品に酸を添加すると凝固する、請求項38に記載の粉末脱脂粉乳製品。
- 前記製品は、緩衝剤、酸素、カタラーゼ酵素またはオキシドレダクターゼ酵素をさらに含む、請求項38に記載の粉末脱脂粉乳製品。
- チーズおよび処理済み乳粉末を含むチーズ製品であって、前記処理済み乳粉末は、チーズ製品の約0.1重量%〜約35重量%の量で存在する、チーズ製品。
- 前記処理済み乳粉末は、カルシウム金属イオン封鎖剤で処理された乳に由来する、請求項43に記載のチーズ製品。
- 前記処理済み乳粉末は、凝乳酵素で処理された乳に由来する、請求項43に記載のチーズ製品。
- 前記処理済み乳粉末は、緩衝剤で処理された乳に由来する、請求項43に記載のチーズ製品。
- 前記処理済み乳粉末は、1種以上の酵素で処理された乳に由来する、請求項43に記載のチーズ製品。
- 前記酵素はオキシドレダクターゼ酵素およびカタラーゼ酵素のうちから選択される、請求項47に記載のチーズ製品。
- 前記処理済み乳粉末は、酸素で処理された乳に由来する、請求項43に記載のチーズ製品。
- 前記処理済み乳粉末は、チーズ製品を製造するために、粉末、液体またはスラリーとしてチーズに加えられる、請求項43に記載のチーズ製品。
