Abstract
Description
本発明は、ステビア含有卓上甘味料組成物、及びそのような組成物の製造方法に関する。本発明のステビア含有甘味料組成物は、単糖を含有する。
人々は、多くの場合、食物及び飲料に甘味料を添加することによりその味を自分の好みに合わせる。例えば、卓上甘味料は、コーヒー及び紅茶などの飲料に、シリアルに、果物に、及び焼き菓子上のトッピングとして添加される。食物又は飲料を卓上甘味料で甘くすることは、その風味を変え、通常、その魅力を増大させる。この行動は全ての文化にて見られるが、特に西洋文化で普及している。
ステビア抽出物及び単糖を含む、これらからなる、及び/又はこれらから本質的になる低カロリー甘味料組成物であって、ステビアが甘味の約20%〜約97%を提供し、全ステビオール配糖体に対して約80重量%〜約99重量%のレバウジオシドAレベルを有する甘味料組成物である。
ステビアは、南米原産の植物Stevia Rebaudiana Compositae Bertoniの抽出物である。Stevia rebaudianaは、南米が原産である。その最初の公知の使用はパラグアイ内であったが、植物及び抽出物の両方が、甘味料として南米内、日本及び中国を含むアジア内で長年使用されている。ステビアはまた、その現在の規制状況により甘味料としてではなく栄養補助食品として販売されている米国内で幅広い支持者を有している。本明細書で使用されるとき、ステビアは、植物、ステビア抽出物から、該植物中に見出されるステビオール配糖体の幅広い集合を指し、ステビオシド及びレバウジオシドは、特定のステビオール配糖体を指す。
単糖は、ショ糖、ブドウ糖、若しくは果糖、又はそれらの組み合わせを含む(しかし、それらに限定されない)任意の甘い単糖類又は二糖類であってもよい。ショ糖及び果糖が好ましい。単糖はまた、褐色の甘い味、特に糖液及びカラメルの味を排除するよう精製されることが好ましい。例えばFOSなどの甘さが最小の非ポリマー性材料も、最小にされる必要がある。
ステビア−単糖の組み合わせに添加し得る更なる甘味料には、フラクトオリゴ糖(FOS)、トレハロース、糖アルコール、タガトース、栄養糖、高強度甘味料、及びそれらの混合物が挙げられる。
本組成物は、風味剤、芳香物質、他の栄養成分、バインダー、及びそれらの混合物を含む他の成分を含有してもよい。
本発明の組成物は、成分の均質で一様な、又は均質な混合物をもたらす当業者に公知の任意の方法で製造することができる。それらの方法には、乾式ブレンド、噴霧乾燥、凝集、湿式造粒、圧縮、共結晶化などが挙げられる。
100gのドミノ(DOMINO)(登録商標)ブランドの粉砂糖(confectioners sugar)(ショ糖)(ドミノ・フーズ社(Domino Foods, Inc.)、メリーランド州ボルティモア)、及び全ステビオール配糖体に対して99重量%のレバウジオシドA濃度を有する2.12gのステビア抽出物(イディルライフ株式会社(Idyll Life Co., Ltd.)、バンコク、タイ)を、連続カッティング及び練り返し(例、V−ブレンディング)により混合及び乾式ブレンドする。得られた混合物は、1g当たり8グラムのショ糖のSES計算値(報告された、ショ糖の330倍のレバウジオシドAの甘味強度に基づき)を有する。
実施例1からの2gのブレンド(サンプルA)及び2小包(約2g)のステビアプラス(登録商標)スイートリーフ(登録商標)ブランドのステビア(ウィズダム・ナチュラル・ブランズ(Wisdom Natural Brands)、アリゾナ州ギルバート)(サンプルB)を、各々、フラビア(Flavia)ブランドのコーヒーメーカー(フラビア・ビバレッジ・システムズ(Flavia Beverage Systems)、ペンシルベニア州ウェストチェスター)からの160gの温水と混合する。サンプルBで使用された各小包は、箱上に、小匙約2杯のSES及び1gのFOSを含有すると記されている。したがって、各小包は、160グラムの水中と等価の約10%ショ糖溶液におけるSESと等価のSESを有する。一般的なステビア抽出物は、約40%未満のレバウジオシドAを含有する。
5つのサンプルを作製する。各々、フラビアブランドコーヒーメーカー(Flavia Brand Coffee Maker)(フラビア・ビバレッジ・システムズ、ペンシルベニア州ウェストチェスター)からの236.6mL(8oz)の温水から始める。
4つのサンプルを作製し、各々、236.6mL(8oz)のフラビア(登録商標)ブランドのブルーベリー紅茶(フラビア・ビバレッジ・システムズ、ペンシルベニア州ウェストチェスター)から始める。
4つのサンプルを作製し、各々、236.6mL(8oz)のフラビア(登録商標)ブランドのラズベリースパークティー(raspberry spark Tea)から始める。
2つの更なるサンプルを作製し、各々、フラビアブランドコーヒーメーカー(Flavia Brand Coffee Maker)(フラビア・ビバレッジ・システムズ、ペンシルベニア州ウェストチェスター)からの236.6mL(8oz)の温水から始める。
2つのサンプルを作製する。
実施例7と同一の材料を使用して3つのサンプルを作製して、実施例7からのサンプルAと共に試験した。
実施例8からの4つのサンプルを、フラビアブランドコーヒーメーカー(Flavia Brand Coffee Maker)(フラビア・ビバレッジ・システムズ、ペンシルバニア州ウェストチェスター)からの177.4mL(6oz)の温水中に異なる濃度で混合して、ほぼ等しい甘味レベルを達成する。等しい甘味レベルは、小匙約4杯のSESと、想定されるショ糖の330倍のステビア甘味強度とに基づき計算する。
4つのサンプルを作製する。
(1) ステビア抽出物及び単糖を含む低カロリー甘味料組成物であって、前記ステビア抽出物が甘味の約20%〜約97%を提供し、かつ全ステビオール配糖体に対して約80重量%〜約99.5重量%のレバウジオシドAレベルを有する、甘味料組成物。
(2) ステビアが甘味の約85%〜約97%を提供する、実施態様1に記載の甘味料組成物。
(3) 前記甘味料組成物が、SES1グラム当たり約0.01〜約1kcalを有する、実施態様1に記載の甘味料組成物。
(4) 風味剤、芳香物質、栄養成分、及びそれらの組み合わせからなる群からの要素を更に含む、実施態様1に記載の甘味料組成物。
(5) 前記甘味料組成物が、非流動性固体、粉末、溶液、スラリー、及び懸濁液からなる群から選択される形態である、実施態様1に記載の甘味料組成物。
(6) グラム、小匙、大匙、カップ、ポンド、キロ、それらの集まり、及びそれらのSES等価物からなる群から選択される単位用量で包装される、実施態様1に記載の甘味料組成物。
(7) ポリマー性甘味料からの甘味を約1%未満含有する、実施態様1に記載の組成物。
(8) ステビアと、ショ糖、果糖、ブドウ糖、及びそれらの混合物からなる群から選択される単糖とを含む甘味剤組成物であって、ステビアが全ステビオール配糖体に対して約80重量%〜約99重量%のレバウジオシドAレベルを有する、甘味料組成物。
(9) 前記ステビアが甘味の約88%〜約97%を提供する、実施態様8に記載の甘味料組成物。
(10) 前記甘味料組成物が、SES1グラム当たり約0.5〜約1kcalを有する、実施態様8に記載の甘味料組成物。
(11) 風味剤、芳香物質、栄養成分、及びそれらの組み合わせからなる群からの要素を更に含む、実施態様8に記載の甘味料組成物。
(12) 前記甘味料組成物が、非流動性固体、粉末、溶液、スラリー、及び懸濁液からなる群から選択される形態である、実施態様8に記載の甘味料組成物。
(13) 前記甘味料組成物が、SES、重量、体積、及びそれらの組み合わせからなる群から選択される単位用量で包装される、実施態様8に記載の甘味料組成物。
(14) 前記単糖が、ショ糖、果糖、ブドウ糖、及びそれらの混合物からなる群から選択される、実施態様8に記載の甘味料組成物。
(15) 約2重量%〜約4重量%のステビア抽出物と、約92重量%〜約98重量%の単糖とを含む低カロリー甘味料組成物であって、ステビアが全ステビオール配糖体に対して約80重量%〜約99重量%のレバウジオシドAレベルを有する、甘味料組成物。
(16) 前記ステビアが甘味の約88%〜約97%を提供する、実施態様15に記載の甘味料組成物。
(17) 前記甘味料組成物が、SES1グラム当たり約0.5〜約1kcalを有する、実施態様16に記載の甘味料組成物。
(18) 風味剤、芳香物質、栄養成分、及びそれらの組み合わせからなる群からの要素を更に含む、実施態様16に記載の甘味料組成物。
(19) 前記甘味料組成物が、非流動性固体、粉末、溶液、スラリー、及び懸濁液からなる群から選択される形態である、実施態様16に記載の甘味料組成物。
(20) 前記甘味料組成物が、グラム、小匙、大匙、カップ、ポンド、キロ、それらの集まり、及びそれらのSES等価物からなる群から選択される単位用量で包装される、実施態様16に記載の甘味料組成物。
(21) 前記単糖が、ショ糖、果糖、ブドウ糖、及びそれらの混合物からなる群から選択される、実施態様16に記載の甘味料組成物。
Claims (21)
- ステビア抽出物及び単糖を含む低カロリー甘味料組成物であって、前記ステビア抽出物が甘味の約20%〜約97%を提供し、かつ全ステビオール配糖体に対して約80重量%〜約99.5重量%のレバウジオシドAレベルを有する、甘味料組成物。
- ステビアが甘味の約85%〜約97%を提供する、請求項1に記載の甘味料組成物。
- 前記甘味料組成物が、SES1グラム当たり約0.01〜約1kcalを有する、請求項1に記載の甘味料組成物。
- 風味剤、芳香物質、栄養成分、及びそれらの組み合わせからなる群からの要素を更に含む、請求項1に記載の甘味料組成物。
- 前記甘味料組成物が、非流動性固体、粉末、溶液、スラリー、及び懸濁液からなる群から選択される形態である、請求項1に記載の甘味料組成物。
- グラム、小匙、大匙、カップ、ポンド、キロ、それらの集まり、及びそれらのSES等価物からなる群から選択される単位用量で包装される、請求項1に記載の甘味料組成物。

- 約2重量%〜約4重量%のステビア抽出物と、約92重量%〜約98重量%の単糖とを含む低カロリー甘味料組成物であって、ステビアが全ステビオール配糖体に対して約80重量%〜約99重量%のレバウジオシドAレベルを有する、甘味料組成物。
- 前記ステビアが甘味の約88%〜約97%を提供する、請求項15に記載の甘味料組成物。
- 前記甘味料組成物が、SES1グラム当たり約0.5〜約1kcalを有する、請求項16に記載の甘味料組成物。
- 風味剤、芳香物質、栄養成分、及びそれらの組み合わせからなる群からの要素を更に含む、請求項16に記載の甘味料組成物。
