【解決手段】搗精度60%の加工種子のGABAの残存率が未加工種子に比べて50%以上である大麦種子を、発芽処理することなく精麦する工程を備える大麦の加工方法を提供する。

Description
発芽処理をしていない大麦品種イチバンボシとCDC Fibarの種子の外層部(糠部分)と内層部(胚乳部分)における遊離アミノ酸分布を調べるために、以下の試験を行った。
大麦品種イチバンボシとCDC Fibarの種子の外層部と内層部における遊離アミノ酸の分布に関して、発芽処理が及ぼす影響を調べるために、以下の試験を行った。
発芽処理をしていない大麦品種イチバンボシとCDC Fibarの種子の外層部と内層部におけるβ−グルカン含有量を調べるために、以下の試験を行った。
発芽処理をしていない大麦品種あぐりもち、CDC Alamo、CDC Fibarの種子の60%搗精度におけるGABA含有量および未加工種子に対するGABAの減少率を調べるために、以下の試験を行った。
Claims (4)
- 搗精度60%の加工種子のγ−アミノ酪酸の残存率が未加工種子に比べて50%以上である大麦種子を、発芽処理することなく精麦する工程を備える、大麦の加工方法。
- 請求項1に記載の大麦の加工方法であって、精麦した大麦種子を粉砕する工程をさらに備える方法。
- 請求項1〜2のいずれか一項に記載の大麦の加工方法で得られる、大麦加工品。
- 請求項3に記載の大麦加工品を含有する飲料。
