Claims (1)
- 【特許請求の範囲】 1.添加酸化防止剤の不在下にて、約30℃よりも高いMDP、約36%以下のトラン ス脂肪酸含量、約68〜約75のIVおよび約280時間の最小AOM値を有する、水素化さ れたカノラ油。 2.前記最小AOM値が約325時間である、請求項1記載の油。 3.前記トランス脂肪酸含量が約31%以下である、請求項1記載の油。 4.添加酸化防止剤の不在下にて、約20℃未満のMDP、約31%以下のトランス脂 肪酸含量、約72〜約77のIVおよび約290時間の最小AOM値を有する、水素化され分 画されたカノラ油。 5.前記最小AOM値が約330時間である、請求項4記載の油。 6.添加酸化防止剤の不在下にて、約30℃よりも高いMDP、約36%以下のトラン ス脂肪酸含量、約68〜約75のIVおよび約280時間の最小AOM値を有する水素化され たカノラ油であって、約72%〜約80%のオレイン酸含量、約5%〜約12%のリノ ール酸含量および約1%〜約5%のα−リノレン酸含量からなる脂肪酸プロフィ ールを有するBrassicaceae種子から抽出される出発油から製造される前記水素化 カノラ油。 7.前記トランス脂肪酸含量が約31%以下である、請求項6記載の油。 8.前記脂肪酸プロフィールが、IMC-130と呼ばれる種子(ATCC受託番号第75446 号)中に存在する遺伝的な遺伝子変化によって制御されるものである、請求項6 記載の油。 9.前記最小AOM値が約325時間である、請求項6記載の油。 10.添加酸化防止剤の不在下にて、約30℃よりも高いMDP、約40%以下のトラン ス脂肪酸含量、約68〜約77のIV、約80%以上の総C18:1含量および約300時間の最 小AOM値を有する、水素化されたカノラ油。 11.前記最小AOM値が約425時間である、請求項10記載の油。 12.添加酸化防止剤の不在下にて、約20℃未満のMDP、約40%以下のトランス脂 肪酸含量、約75〜約81のIV、約86%以上の総C18:1脂肪酸含量および約350時間の 最小AOM値を有する、水素化され分画されたカノラ油。 13.総飽和脂肪酸含量が約9.5%未満である、請求項12記載の油。 14.前記AOM最小値が約450時間である、請求項12記載の油。 15.添加酸化防止剤の不在下にて、約30℃よりも高いMDP、約40%以下のトラン ス脂肪酸含量、約68〜約77のIV、約80%以上の総C18:1脂肪酸含量および約300時 間の最小AOM値を有する水素化されたカノラ油であって、約80%〜約87%のオレ イン酸含量、約2%〜約5%のリノール酸含量および約1%〜約4%のα−リノ レン酸含量からなる脂肪酸プロフィールを有するBrassicaceae種子から抽出され る出発油から製造される前記水素化カノラ油。 16.前記Brassicaceae種子が、デルタ−12脂肪酸デサチュラーゼの第一形態およ び第二形態に欠損を有するものである、請求項15記載の油。 17.前記脂肪酸プロフィールが、6Q4275A-1-4と呼ばれる種子(ATCC受託番号第9 7569号)中に存在する遺伝的な遺伝子変化によって制御されるものである、請求 項15記載の油。 18.カノラ油を製造する方法であって、 (a)約72%〜約80%のオレイン酸含量、約5%〜約12%のリノール酸 含量および約1%〜約5%のα−リノレン酸含量を有する、精製され漂 白された未水素化出発カノラ油を用意する工程、および (b)該出発油をIVが約68〜約75となるよう水素化し、添加酸化防止剤 の不在下にて、約30℃よりも高いMDP、約36%以下のトランス脂肪酸 含量および約280時間の最小AOM値を有する水素化油を得る工程 を含む前記方法。 19.前記トランス脂肪酸含量が約31%以下である、請求項18記載の方法。 20.前記水素化油を固体画分と液体カノラ油画分とへ分離する工程をさらに含み 、該液体画分が、添加酸化防止剤の不在下にて、約20℃未満のMDP、約31%未満 のトランス脂肪酸含量、約72〜約77のIVおよび約290時間の最小AOM値を有するも のである、請求項18記載の方法。 21.前記AOM最小値が約330時間である、請求項20記載の方法。 22.前記出発油が、IMC-130と呼ばれるBrassicaceae種子(ATCC受託番号 第75446号)から抽出されるものである、請求項18記載の方法。 23.カノラ油を製造する方法であって、 (a)約80%〜約87%のオレイン酸含量、約2%〜約5%のリノール酸 含量および約1%〜約4%のα−リノレン酸含量を有する、精製され漂 白された未水素化出発カノラ油を用意する工程、および (b)該出発油をIVが約68〜約77となるよう水素化し、添加酸化防止剤 の不在下にて、約30℃よりも高いMDP、約40%以下のトランス脂肪酸 含量および約300時間の最小AOM値を有する水素化油を得る工程 を含む前記方法。 24.前記水素化油を固体画分と液体カノラ油画分とへ分離する工程をさらに含み 、該液体画分が、添加酸化防止剤の不在下にて、約20℃未満のMDP、約40%以下 のトランス脂肪酸含量、約75〜約81のIV、約85%以上の総C18:1脂肪酸含量およ び約350時間の最小AOM値を有するものである、請求項23記載の方法。 25.前記液体カノラ油画分の総飽和脂肪酸含量が約9.5%未満である、請求項24 記載の方法。 26.前記AOM最小値が約450時間である、請求項24記載の方法。 27.前記出発油が、デルタ−12脂肪酸デサチュラーゼの第一形態および第二形態 に欠損を有するBrassicaceae種子から抽出されるものである、請求項23記載の方 法。 28.前記出発油が、6Q4275A-1-4と呼ばれるBrassicaceae種子(ATCC受託番号第9 7569号)から抽出されるものである、請求項23記載の方法。
