Abstract
In un impianto di preparazione e confezionamento di carni cotte, quali ad esempio i prosciutti cotti e simili, sono presenti, sequenzialmente: delle stazioni (1) di formatura di contenitori (2) in materiale termoplastico, con pluralità di fori di spurgo sulle parti; delle stazioni di carico della carne (6), proveniente dalla zangolatura, in detti contenitori, con incappucciamento e pressatura; delle stazioni di disaerazione con vuoto lento (13), delle stazioni di imbustamento (16), in buste per alimenti (17) con valvola di non ritorno (19); delle stazioni (20) di esecuzione di vuoto spinto con chiusura delle buste; delle stazioni o forni di cottura con termoformatura e termoretrazione dei contenitori termoplastici e raccolta dei liquidi di risulta nelle buste stesse; delle eventuali stazioni di raffreddamento a doccia; delle stazioni di posizionamento ed inforcatura (26) delle valvole di non ritorno (19) con testine d'aspirazione e di estrazione (25) dei liquidi di risulta e scarico degli stessi in serbatoi a tenuta (27); delle stazioni di scarico dei prodotti sigillati, sotto vuoto, pronti per la distribuzione.
