Abstract

Procedimento per trattare latte naturale per produrre latte trattato avente un contenuto batterico inferiore rispetto al latte naturale. Il latte viene omogeneizzato ed entro 5 minuti dalla omogeneizzazione, viene sottoposto a microfiltrazione dinamica, per dare un filtrato che presenta un contenuto batterico inferiore rispetto al latte naturale iniziale. Quando la velocità di flusso del latte attraverso il microfiltro scende al disotto di un livello predeterminato, il microfiltro dinamico viene rimosso dal dispositivo di filtrazione del latte, flussato con acqua, e fatto tornare al dispositivo di filtrazione del latte, gli stadi essendo ripetuti quando necessario, finché la membrana non può essere rigenerata ad una capacità minima di filtrazione, tempo al quale la membrana viene sottoposta a pulizia chimica per ripristinare essenzialmente la capacità iniziale di filtrazione della membrana.
