Abstract

Il prodotto dell'invenzione è destinato alla confezione rapida di marmellate casalinghe dietetiche, ma presentanti qualità di conservazione analoghe alle altre. Il prodotto contiene tipicamente, con saccarosio, 1,6% di pectina gelificante, 0,4% di acido citrico anti-ossigeno e 0,15% di sorbato di potassio conservante, a titolo di additivi.Il prodotto è un miscuglio macroscopicamente omogeneo di due fasi granulari di granulometrie analoghe, una prima fase entrando nel miscuglio per un peso dal 75 a 80% e costituita da cristalli di saccarosio puro di taglie sostanzialmente uniformi ed una seconda fase essendo formata da grani a composizione sostanzialmente regolare di un agglomerato degli additivi con saccarosio in polvere.E' indispensabile che i tenori in additivi siano mantenuti in limiti stretti per essere efficaci senza rischi di sovradosaggi. L'omogeneità del prodotto dell'invenzione deriva dal fatto che da una parte, l'apporto di additivi al saccarosio avviene tramite due mescolature successive e, d'altra parte, le due fasi del miscuglio hanno sostanzialmente la medesima granulometria.
