Abstract

A preserving powder mix mainly for fruit jams and especially for the use of diabetics avoids the use of sugar other than fructose. Sodium cyclamate, citric acid and opt. consistency regulating agents of plant origin are also added. The mix is prepd. at 30-60% pref. 40-55% relative humidity. - The mix is prepd. at 80-96 wt.% of crystalline fructose 80-95 pref. 80-90% of this total, passes a 0.1 mesh sieve. 4-15% of the sieved crystalline fructose is mixed with 25-100% preservative pref. sodium benzoate (or potassium sorbate) in a closed mixer. Other components as citric acid, sodium-cyclamate, and in case of conserves and jams of fruit-vegetable origin, consistency controlling cpds. of plant origin are mixed with the other, main portion of fructose. - Finally the fructose fractions are mixed and homogenised. The prepn. is packaged also at a max. relative humidit of 60%.
