Abstract
1369198 Simulated fruit UNILEVER Ltd 15 Nov 1971 [16 Nov 1970] 54398/70 Heading A2B Simulated fruit are prepared by rapidly mixing together an alignate or pectate sol, a source of calcium ions that in the absence of an agent capable of releasing calcium ions provides insufficient calcium ions to gel the sol,. fruit' pulp or fruit puree, and an agent capable of releasing calcium ions, and allowing the mixture to gel under substantially shear-free conditions. The product may be employed for example in the production of pies, flans, dairy products, or jams. The source of calcium ions may be a calcium salt which is substantially insoluble under neutral, but soluble under acid conditions, and the releasing agent may be an acid. The mixture may contain locust bean gum. Also present may be a freeze-thaw. stablising agent, such as a pre-cooked starch.
