Abstract
Gelled bodies for use as artificial fruits or pharmaceutical products are produced by drop-moulding (see Group V), a solution of material being dropped into a gelling bath. The solution may comprise 10 gr. of sodium alginate containing a chemical equivalent of colloidal calcium phosphate (as described in Specifications 716,112 and 724,178, [Group IV (b)], 5 gr. of sodium alginate, 500 gr. of sugar and 315 gr. of neutral glucose syrup, the whole being dissolved in 300 gr. of water and boiled down to 1,000 gr. The glucose may be free from calcium. If the glucose is acid or contains calcium, a small quantity of tetrasodium pyrophosphate may be added to the mix. The gelling bath for such a solution may be a 10 per cent. solution of citric acid containing 0.6 per cent of glassy sodium metaphosphate of the type known as Graham's salt. A solution of any edible acid may be used as an acid setting bath. A gelling bath containing a calcium salt may be used to gel sodium alginate.
