Biscuits; confectionery or sweetmeats.-Almonds and sugar are made into marzipan, and then mixed with dry or concentrated white of egg or other albuminous substance, forming a paste which will keep. The paste is used for making macaroons and other similar confectionery containing almonds and sugar, using water or an aqueous solution of sugar or fresh white of egg as required. The proportion of white of egg is greater than usual in macaroon paste, and the paste can be made softer without the risk of running in the oven, thus facilitating the making of ring macaroons, beehives, &c.
