Abstract

A találmány tárgyát ciklodextrin-glükanotranszferáz (CGTáz) képezi éseljárás ennek előállítására. A találmány szerinti CGTáz jellemzői: (1)elsősorban keményítőn és hasonló anyagokon fejti ki hatását, főképpeng-ciklodextrint termelve; (2) optimális pH-érték: 10,5-11; (3)optimális hőmérséklet: körülbelül 60 °C; (4) stabil pH-érték: 6-11, és(5) hőmérséklet-stabilitás: 15 percig 50°C-on kezelve a maradékaktivitás nem kevesebb mint 90%. A ciklodextrin-glükanotranszferáztúgy állítják elő, hogy a Bacillus clarkii fajhoz tartozómikroorganizmust tenyésztenek, amely CGTázt termel. A találmány tárgyatovábbá az eljárás ciklodextrin előállítására, oly módon, hogy afentiek szerint előállított CGTázt keményítőt vagy hasonlót tartalmazóoldattal reagáltatják. A találmány szerint elsősorban g-ciklodextrintállítanak elő. Ó
