Claims (14)
1. Nutritivna kompozicija koja sadrži proteinsku komponentu, lipidnu komponentu, ugljikohidratnu komponentu, minerale, vitamine i vodu, pri čemu proteinska komponenta sadrži najmanje dva različita izvora proteina; pri čemu nutritivna kompozicija ima pH u opsegu 5.5 - 9.0 i pri čemu
a) prvi izvor proteina je hidrolizirani kolagen sa prosječnom molekulskom masom Mw od 1000 Da do 6000 Da;
b) lipidna komponenta osigurava najmanje 30 EN% ukupne energije kompozicije
c) prvi izvor proteina predstavlja 70-90 mas% na osnovu ukupne mase proteinske komponente i
d) drugi izvor proteina je mliječni protein i pri čemu mliječni protein predstavlja 10-30 mas% na osnovu ukupne mase proteinske komponente.
2. Nutritivna kompozicija prema patentnom zahtjevu 1 koja ima kalorijsku gustoću od najmanje 2 kcal/mL.
3. Nutritivna kompozicija prema bilo kojem prethodnom patentnom zahtjevu, pri čemu proteinska komponenta osigurava najmanje 15 EN% na osnovu ukupne energije nutritivne kompozicije.
4. Nutritivna kompozicija prema bilo kojem od prethodnih patentnih zahtjeva koja sadrži najmanje 14g proteina po 100mL proizvoda.
5. Nutritivna kompozicija prema bilo kojem od prethodnih patentnih zahtjeva koja ima odnos proteina i vode od najmanje 2.0/10 [g/g].
6. Nutritivna kompozicija prema bilo kojem prethodnom patentnom zahtjevu, pri čemu lipidna komponenta osigurava najviše 50 EN% na osnovu ukupne energije nutritivne kompozicije.
7. Nutritivna kompozicija prema bilo kojem prethodnom patentnom zahtjevu, pri čemu ugljikohidratna komponenta osigurava najmanje 25 EN% na osnovu ukupne energije nutritivne kompozicije.
8. Nutritivna kompozicija prema bilo kojem prethodnom patentnom zahtjevu pri čemu
a) proteinska komponenta osigurava 15-25 EN% na osnovu ukupne energije nutritivne kompozicije;
b) lipidna komponenta osigurava 40-50 EN% na osnovu ukupne energije nutritivne kompozicije; i
c) ugljikohidratna komponenta osigurava 30-40 EN% na osnovu ukupne energije nutritivne kompozicije.
9. Nutritivna kompozicija prema bilo kojem od prethodnih patentnih zahtjeva koja sadrži najmanje 10 mas% proteina na osnovu ukupne energije kompozicije.
10. Nutritivna kompozicija bilo kojem prethodnom patentnom zahtjevu koja je u/v emulzija.
11. Nutritivna kompozicija prema bilo kojem od prethodnih patentnih zahtjeva koja ima pH 7-9.
12. Nutritivna kompozicija prema bilo kojem prethodnom patentnom zahtjevu dalje naznačena time što je nutritivno kompletna.
13. Postupak za dobivanje nutritivne kompozicije koja sadrži proteinsku komponentu koja sadrži hidrolizat kolagena prosječne molekulske mase Mw od 1000 Da do 6000 Da, lipidnu komponentu, ugljikohidratnu komponentu, minerale, vitamine i vodu, pri čemu proteinska komponenta sadrži najmanje dva različita izvora proteina, pri čemu je drugi izvor proteina mliječni protein, pri čemu hidrolizat kolagena predstavlja 70-90 mas% na osnovu ukupne mase proteinske komponente, i pri čemu mliječni protein predstavlja 10-30 mas% na osnovu ukupne mase proteinske komponente, postupak koji obuhvaća sljedeće korake:
i. prvi korak, u kome se osigurava voda i zagrijava do temperature od 50-70°C;
ii. drugi korak, u kome se ugljikohidratna komponenta – ili njena frakcija – i po izboru, stabilizator, kao što je MCC, dodaje;
iii. treći korak, u kome se dodaje proteinska komponenta;
iv. četvrti korak, u kome se dodaje lipidna komponenta, poželjno na povišenoj temperaturi od 80-90°C, poželjno u kombinaciji sa (daljim) emulgatorom i / ili stabilizatorom, kao što je sojin lecitin i / ili diacetil vinske kiseline glicerida (npr. DATEM), i / ili (destilirani) monogliceridi;
v. peti korak, u kome se vitamini, minerali i, po izboru, preostala frakcija ugljikohidratne komponente dodaju, po izboru, bilo koji drugi praškasti sastojak može se dodati u petom koraku, npr. vlakna, aroma, i drugi aditivi. U bilo kojem trenutku prije, tokom, ili nakon petog koraka, smjesa se ostavi da se ohladi na 55-65°C;
vi. šesti korak, u kome se pH smjese podešava na 6-9, poželjno 7-8, npr. 7;
vii. sedmi korak, u kome se smjesa homogenizira, npr. na 60-65°C pod pritiskom od 100/50 bara;
viii. osmi korak, u kome se smjesa sterilizira. Osmi korak može obuhvaćati (8.a) korak prethodnog zagrijavanja, (8.b) korak zagrijavanja (8.c) i dodatni korak homogenizacije.
14. Postupak prema patentnom zahtjevu 13, u kome je korak 8 podijeljen na:
a) korak 8.a, u kome se smjesa prethodno zagrijava do 70-100°C, poželjno do 85-95°C, npr. tokom 2-5 minuta;
b) korak 8.b, u kome se smjesa zagrijava do 130-140°C, poželjno do 139-141°C, npr. tokom 6-15 sekundi; i
c) korak 8c, u kome se smjesa homogenizira pod pritiskom od 40-200bara, poželjno korak 8.c se izvodi na manje od 90°C.
