本明細書で使用される「高タンパク質」は、タンパク質構成要素が栄養組成物の総エネルギーベースで少なくとも15EN%、好ましくは少なくとも18EN%、最も好ましくは少なくとも20EN%を供給する栄養組成物を指す。好ましい実施形態では、かかる栄養組成物は、組成物の総重量ベースで少なくとも10重量%、好ましくは少なくとも12重量%、より好ましくは少なくとも14重量%のタンパク質を含む。本開示によると、タンパク質含量には、例えば多くとも40EN%、好ましくは多くとも30EN%、より好ましくは多くとも28EN%という上限があり得る。

炭水化物構成要素は、1つ以上の炭水化物源を含み得る。典型的な炭水化物源はマルトデキストリン(maltodextrine)、グルコースシロップ、スクロース、フルクトース、イソマルツロース、デンプン(加工又は非加工)、タピオカデキストリン(dextrine)及びそれらの混合物からなるリストから選択することができる。

d)脂質構成要素を、好ましくは80℃~90℃の昇温で、好ましくはダイズレシチン、(蒸留)モノグリセリド又はジアセチル酒石酸グリセリド等の(更なる)乳化剤及び/又は安定剤と組み合わせて添加する第4の工程と、
e)ビタミンと、ミネラルと、任意に炭水化物構成要素の残部とを添加する第5の工程であって、任意に、任意の他の粉末成分、例えば繊維、香料及び他の添加物を該第5の工程において添加してもよく、該第5の工程の前、その最中又はその後の任意の時点で、混合物を55℃~65℃まで冷却する、第5の工程と、
f)混合物のpHを6~9、好ましくは7~8、例えば7に調整する第6の工程と、
g)混合物を、例えば60℃~65℃、100/50バールの圧力で均質化する第7の工程と、
h)混合物を滅菌する第8の工程と、
を含む、方法。第8の工程は、(8.a)予熱工程と、(8.b)加熱工程と、(8.c)付加的な均質化工程とを含み得る。
a)混合物を、例えば2分間~5分間にわたって70℃~100℃、好ましくは85℃~95℃に予熱する工程8.aと、
b)混合物を、例えば6秒間~15秒間にわたって130℃~140℃、好ましくは139℃~141℃に加熱する工程8.bと、
c)好ましくは90℃未満で行われる、混合物を40バール~200バールの圧力で均質化する工程8.cと、
に分けられる、実施形態32に記載の方法。
実施例5による栄養組成物(試験飲料)を1日当たりおよそ400kcalの補助栄養の指示と共に被験体に与える。被験体は、65歳以上の年齢群に属する。年齢、性別、身長及びBMIを記録する。投与量は、連続7日間にわたって1日当たり125ml容のボトル1本である。かかるボトル1本は400kcalを供給し、20gのタンパク質(20EN%)、20gの脂肪(45EN%)及び35gの炭水化物(35EN%)を含む。
GPC/HPLCによる加水分解コラーゲンの分子量の決定
装置:214nmで作動するUV検出器を備えるGPV/HPLC。カラム:TSK 2000 SW XL(Toshoh Biosience GmbH)。400mmol/lリン酸ナトリウムバッファー(pH5.3)を用いた定組成溶離。明確に規定されたI型コラーゲンフラグメント(FILK,Freiburg,Germany)を用いた較正。実施例に使用したコラーゲン加水分解物は、2kDaの平均分子量を有するものであった。概して、GPCによる分子量決定について当業者は十分に理解している。本明細書に記載の加水分解物等の小さな高分子のMwを決定する別の好適な方法は、MALDI-MSである。
Claims (10)
- タンパク質構成要素と、脂質構成要素と、炭水化物構成要素と、ミネラルと、ビタミンと、水とを含む栄養組成物であって、前記タンパク質構成要素が少なくとも2つの異なるタンパク質源を含み、該栄養組成物が5.5~9.0の範囲のpHを有し、
a)第1のタンパク質源が加水分解コラーゲンであり、
b)前記脂質構成要素が、該組成物の総エネルギーの少なくとも30EN%を供給し、
c)前記第1のタンパク質源が、前記タンパク質構成要素の総重量ベースで70重量%~90重量%を占め、
少なくとも2.5kcal/mLのカロリー密度を有し、
生成物100mL当たり少なくとも14gのタンパク質を含み、
第2のタンパク質源として乳タンパク質が選択され、
該乳タンパク質がタンパク質構成要素の総重量ベースで10重量%~30重量%含まれる、栄養組成物。 - 前記タンパク質構成要素が、前記栄養組成物の総エネルギーベースで少なくとも15EN%を供給する、請求項1に記載の栄養組成物。
- 前記加水分解コラーゲンが1000Da~6000Daの平均分子量Mwを有する、請求項1または2に記載の栄養組成物。
- 前記脂質構成要素が、前記栄養組成物の総エネルギーベースで多くとも50EN%を供給する、請求項1~3のいずれか一項に記載の栄養組成物。
- a)前記タンパク質構成要素が、前記栄養組成物の総エネルギーベースで15EN%~25EN%を供給し、
b)前記脂質構成要素が、前記栄養組成物の総エネルギーベースで40EN%~50EN%を供給し、
c)前記炭水化物構成要素が、前記栄養組成物の総エネルギーベースで30EN%~40EN%を供給する、
請求項1~4のいずれか一項に記載の栄養組成物。 - カロリー密度が少なくとも2.8kcal/mLである、請求項1~5のいずれか一項に記載の栄養組成物。
- カロリー密度が少なくとも3.0kcal/mLである、請求項1~5のいずれか一項に記載の栄養組成物。
- 栄養学的に完全であることを更に特徴とする、請求項1~7のいずれか一項に記載の栄養組成物。
- 療法に使用される、請求項1~8のいずれか一項に記載の栄養組成物。
- 栄養失調の予防及び治療に使用される、請求項9に記載の栄養組成物。
