Abstract

A table jelly preparation, for mixing with water to form the jelly eaten, and having gelatine, sugar and fruit syrup or fruit juice flavouring as its principal constituents and of water content 10-26%, is in the form of pieces of volume less than 0,02 cubic inch, preferably of volume 0,02-0,001 cubic inch. The pieces may be prepared by melting a mixture of the ingredients, pouring to a thin sheet, and, after setting, cutting the sheet with parallel wires or knives. The pieces may be coated with an edible powder, e.g. a powder of sucrose, gelatine, dextrose, lactose or pregelatinized starch.
