Abstract
PURPOSE: Sugariness, fruit juice, acid, etc. are added to glucomannan to form a product like fruit jam, thus producing low-calorie diet food mainly containing glucomannan that can be eaten with good taste.
CONSTITUTION: To a sugar solution of 20W30wt% sugariness content made from maltitol (syrup of reducing maltose) is added powder of purified glucomannan under stirring until the content of the glucomannan becomes 2.0W4.0wt% and they are additionally stirred to form a uniform dispersion. The glucomannan-containing aqueous sugar sol is aged for 30W60min to give a high-viscosity sol. In the meantime, another sugar solution containing 20W30wt% of reducing maltose is prepared by the same volume as the above sol and pectin is gradually added to the solution when the solution is 50W60°C until the content becomes 0.6W1.0wt%. Then, both of them are mixed and heated and when the temperature reaches 50W60°C, aqueous citric acid is added thereto. The mixture is further heated and when the temperature attains 82W 85°C, 10wt% of 100% fruit juice are added thereto to give the objective product like fruit jam.
