Abstract
855,558. Dielectric heating of foodstuffs. RADIO HEATERS Ltd. July 13, 1959 [July 17, 1958], No. 22989/58. Class 39(3). [Also in Group VI] In a method of heating, e.g. defreezing, foodstuffs are subjected to dielectric heating between electrodes the overlapping portion of which, viewed in a direction transverse to the planes of the electrodes, are wholly within the free edges of the foodstuffs. As shown, slabs of butter 4, or frozen fish, are arranged in contact with one another on a conveyer band electrode 6. The upper electrode 8 is narrower than the slabs 4, and may have adjustable plates mounted thereon by means of which its effective dimensions can be varied. The electrode 8 may be supplied with energy from a radio frequency generator mounted above the screening shell (not shown) of the oven. Overheating of foodstuffs at the beginning and end of each run can be avoided by arranging slabs of dummy material having the same characteristics as the foodstuff at each end. If desired, a balanced electrode system can be used, i.e. alternating voltages of the same order of magnitude or in phase opposition may be applied to two electrodes arranged above the conveyer.
